- These snacks are sure to please even the pickiest eaters! They are perfect to bring to a family gathering or just have around the house for Christmas snacking.

Recipes:
Gingerbread Popcorn
1/4 cup popcorn kernels
2 tbsp coconut oil or dairy free butter
2 tbsp maple syrup
1 tsp ground cinnamon
1/2 tsp ginger powder
1/4 tsp ground cloves
1/4 tso ground nutmeg
Pinch of salt
Directions:1. Preheat oven to 325F and have a large non stick baking sheet ready.
2. Pop popcorn in air popper or on stove - however you make it.
3. In a small mixing bowl, melt coconut oil and then add maple syrup, spices, and salt. Mix together well.
4. Pour mixture onto popped popcorn, making sure to evenly coat all the popcorn.
5. Put popcorn in a baking sheet in an even layer and bake for 10 minutes.
5. Enjoy!
Sweet and Spicy Candied Nuts & Seeds
1 cup pecans
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup almonds, chopped
1/4 cup cashews, chopped
3 tbsp maple syrup
2 tsp ground cinnamon
1/2 tsp cayenne pepper - add more for more heat
1/4 tsp salt
Directions:1. Preheat oven to 325F and have a large non stick baking sheet ready.
2. Mix all ingredients together in a medium sized bowl.
3. Pour mixture onto baking sheet in an even layer and bake for 20 minutes, stirring occasionally.
4. Let the nuts cool before serving and enjoy!
Candy Cane Chocolate Bark
1 1/4 cup chocolate chips (make sure to get dairy free to keep it vegan)
1/3 cup pretzels, crushed/chopped
1/3 cup pumpkin seeds
1/3 cup almonds, chopped
1/3 cup pecans, chopped
2 pitted medjool dates, chopped
2 candy canes, crushed
Pinch of salt
Directions:
Melt chocolate in a bain-marie on the stove or use my easy microwave technique - heat the chocolate in the microwave for 30 seconds bursts, stirring in between, until melted (takes approx. 1 1/2 minutes)
Mix all ingredients except for the candy canes into the melted chocolate.
Pour mixture into a freezer safe container lined with a baking sheet. Pour candy canes on top.
Freeze for 2 hours or until hard, remove from freezer and break into pieces and serve.

Ahhhhh, this video put me in a festive mood. I’d like a video of veggie side salads (i.e. not lettuce based) to enhance the holiday menu. BTW, he’s right, the lentil loaf is great. The next time I make it I’m going to lighten up on the cumin, per my personal taste. I pre sliced and put the leftovers in the freezer layered between wax paper. I reheated for future meals in a toaster oven. I’m curious to try it in a sandwich. OK, now I’m hungry…….. Keep up the good work Simnett!

I heat up carob syrup in a small skillet, let it sizzle then add chopped nuts. Little syrup goes a long way. Stir till all are coated. Cook about 5 minutes, then cool on wax paper. Roughly 1 tablespoon syrup to about a cup of chopped nuts. Also, buy candy canes after Christmas and use next year. Super cheap and they don't go bad! Caramelized nuts great in Asian stir fry!

The chocolate bark is so delicious! And it made a lot! I used sunflower seeds instead of pumpkin seeds, because that is what I had on hand. Carnivore hubby loved it! Thank you for a great holiday recipe!

Oh the nuts won't last an hour, lol. I agree the popcorn serving could be bumped up but I didn't want everyone to think I eat like 12 cups in one sitting (I do) lol.
Sweet and Spicy nuts are my favorite which is why I don't make them often as they are so addictive. They make a great gifts too. I'll be trying out the popcorn recipe over the holidays I'm sure that one will be a crowd please. I nearly fainted when I saw the price of the candy canes - I'll pass adding that to the bark for this year anyways. BIG YES for additional holiday food ideas - snacks, main meals, sides, desserts you name it as the holidays can last for a couple of weeks while getting together with family and friends so it's nice to have variety. If you’re looking to try a new recipe you should try making a Mushroom Wellington or a Lions Mane Mushroom Steak. They are easy to make and great for a holiday or a date night.
Oh these look so good! I bet they are also perfect as a small, but very fancy present instead of home-made cookies. But maybe you could make a video about how to make vegan Christmas cookies? Maybe including some cookies from other countries, too, like Vanillekipferl (vanilla crescents), Kokosmacronen (coconut macaroons) or Spekulatius (spekulaas), just to name some traditional cookies from Europe :)

OOOOH that popcorn!! 👀 And Yum Earth makes some amazing peppermint suckers (lollipops) that I found for a great price at Home Goods a few years ago. Almost had a heart attack when I saw the price on Amazon but ordered peppermint and a variety bag anyway. I’m not usually a hard candy person, but their stuff is made out of real ingredients and are an amazing treat!

@@Simnettnutrition Hey, Derek - you got me craving those suckers again so I did a Google search and found them for an amazing price at a nearby Kroger - less than half what they are on Amazon, and found them at a better price online at Thrive Market too. Anyhoo, I know you don’t do a lot of sweets, but you might be able to find the brand at better prices up there in the great white north if you end up loving the candy canes. 😃 PS just made the spice mix so I can do popcorn tomorrow!!

The lentil loaf is really great, and everyone seems to love it, vegans and non-vegans alike. We make it often and have even created different loaf styles. So maybe that is something you can consider - making and sharing a different loaf recipe.

Looking for something that is easy to make and bring/cook or re-heat to family gathering at Christmas time. That would be a great video - its hard when you are travelling to a get together and you need to bring your own food (only plant based eater in the group always).

All right in Christmas groove already ⛄ .. t's not officially Christmas without Christmas snacks 🍪 Your Christmas snacks are as epic as your wraps... I love nuts, and with chocolate or something sweet is just the perfect snack (not 100 % healthy, but hey a little bit of fun is necessary and healthy, too). I'd probably skip the candy cane (too expensive and I'm not crazy about candy) I would probably mix the chocolate snack with vegan vanilla ice cream... Nice lights in the back 🌟🌲... Where's my Santa hat?! ...
