It’s for the best, and you’re doing the right thing, but you’ll have amazing memories for the rest of your life. Unfortunately this is something you do when young and no kids or like my friends dad who in the 80’s bought 2 narrow boats and set up a business in his 50’s where one was sleeping and other was his plus restaurant. He sold holidays where he toured on canals with paying guests where he provided breakfast and lunch. However he had his career and kids that had grown up and left and money set aside But it was worth a punt, and you’ve found like all the rest of us, you have to get a home and job and support wife and kids. It’s not easy, and nobody really wants to but it’s called growing up and it sucks

Jo - you need to learn to crimp your pastry tops! Not only will the pies look lovely and decorative with the crimped pattern around the rim, but this pinching method will also make sure your pastry tops stick to the bottom pastry case - the pies will hold together much better, and not collapse in your hand when you bite into them. Crimping is easy to learn - everyone's Granny has been doing it for centuries! Get crimping, girl!

Boat-shaped sweet pies? My Grandma used to have a couple of bun tins for making Victoria Fingers (for trifle sponges). Boat-shaped pies, ideal for selling to children of all ages from a Narrow Boat!
My wife took one look at those apple pies and said apple turnovers would be better, and she wasn't watching. She was planning Christmas meals. I must say they looked delicious and mouth watering. I had wondered how long it would be before the need to be on a boat would kick in.

Jo, keep your rough puff pastry rough. It makes those tarts look yummy and definitely not commercially made. A sprinkle of icing sugar would be the only way to make them even better. Love the vlogs and seeing William growing so quickly.

Pastry shrinkage is because need to rest after you have rolled out, then you lift it off the board so it is not stuck and then it will move back to it's relaxed state where upon you can cut into pastry. Best buy it in on a catering roll put back in freeser what you don't use says James Martin chef. cheap enough theese days.

If you ever decide to do a UA-cam channel these guys are the ones to study, their wit, timing and cinematic filming is amazing. I'm looking forward to watching their next steps in life.
