Every guyanese love that fish, it's cooked mostly in curry with water gravy or coconut milk, it has to be cooked with the shell on, it cannot be removed unless it's cooked so the shells has to be scrubbed well with a brush, wash with lemon then salt and flour, inside to be cleaned well also, it's delicious when cooked with green mango or tamarind and sigan-moringa drum sticks, hope this info helps, other garnishes like scallions and parsley

He said he had spent the day on the river cast netting them from a john boat which he push-polled out to his spot. Apparently he sells them for a living. We in Suriname eat them. They are even protected during our raining season, when they make nests and lay eggs. If this was Suriname, trust me, there wouldn't be so much of them left. We call it Kwie kwie and cook it in a curry sauce.

I cut 2 of them in my backyard pond, was not sure what to do with them and released them back in the pond. One is over 2lb and second one was 1.17lb

You can't throw those back at all. You have to either eat them or kill them and dispose. Best thing is to stew or curry them.
