A Coconut Macaroon with Sweetened Condensed Milk is one of the easiest cookie recipes to make in the spring. It takes less than 6 ingredients to make and they whip up in a snap! They are delicious as is, but if you want to kick them up a notch, dip their bottoms in melted semi-sweet chocolate, and they become absolutely divine!

COCONUT MACAROONS WITH CONDENSED MILK AND CHOCOLATE
Makes 12 cookies

INGREDIENTS
14 ounces (396g) of sweetened coconut flakes
14-ounce (396 g) can of sweetened condensed milk
2 egg whites, whipped to a stiff peak
⅛ teaspoon (large pinch) salt
1 teaspoon (5 ml) vanilla extract
2 cups (340g) Semi-Sweet Chocolate Chips
INSTRUCTIONS
Preheat the oven to 325F degrees. Line a baking sheet with parchment paper or a Silpat mat and set aside.
In a large mixing bowl combine the coconut, sweetened condensed milk, vanilla extract and salt.
Stir until the coconut and sweetened condensed milk are well incorporated.
Whip the egg whites with an electric mixer until stiff peaks form.
Fold in the egg whites, into the coconut mixture, in thirds, lightening the batter in each addition.
Using a medium-sized ice cream scoop, portion out 9 batter balls on the baking sheet.
Bake for 25 minutes. Remove from the oven and allow to cool.
Meanwhile, place the chocolate chips in a microwave-safe bowl, and microwave on high at :30 intervals, stirring with a fork in between, to melt the chocolate into a smooth consistency.
Submerge the coconut macaroon in the chocolate at least ¼" deep, remove and allow the excess to drip off.
Place the cookie on a clean parchment lined baking sheet to set up.
For faster setting, place the tray in the refrigerator for 30 minutes.
Keep refrigerated until ready to serve.
Remove 10-15 minutes before serving to come up to room temperature.

I can never get enough macaroons. I knew better when I went into Aldi today. I've ate half the package. Plus half the macarons. Hopefully the French roast i bought will be good because believe me the price is right.

@@EntertainingWithBeth I live at high altitude. I made the same sized cookies you did. I had to bake them 4 minutes longer. Great flavor.👍👍
I’ve made a similar recipe to this in the past , but it didn’t call for the egg whites. I will try that next time I make them. Also, my recipe calls for stirring the chocolate chips into the coconut mixture prior to baking. Saves time on melting and dipping the cookies into the chocolate, but both taste the same!

That is a good question. I have never tried it that way, but my instinct would be that it may deflate them since the sweetened condensed milk is so heavy, and then you would be mixing it twice, essentially once into the milk, and secondly, into the coconut which could deflate it further but you never know unless you try if you do do it that way let me know because now I’m curious ha ha ha!

Same question, we only have unsweetened in stores over here.
Oh sure you could try that! I've never personally done it, but I can't imagine it wouldn't work. Just be sure to use the sweetened condensed milk since that will help bind them together even more without the stickiness of the sweetened coconut, you may need that. So glad the Madeleines were a hit!

I can only get 10 oz cans of sweetened condensed milk. If I reduce the ingredients in the same ratio i.e. 10 ounces coconut etc how many or what weight of egg whites should I use?
What would happen if I used two whole eggs instead of just the whites?
I don't think it would create the same light effect, they would probably be denser, but try it! I bet they would still taste good :)
What can u use besides egg whites? I'm vegetarian, please give options.

I watched this in memory of my late mother, whom we tortured as children because coconut made her sick and she would not make these for us due to that. So as good offspring, we tormented her that we had a deprived childhood without them. LOL.

Tried these as I love macaroons. Carefully incorporated the coconut and condensed milk, but the cookies spread completely during baking leaving one large ugly mass. Never had this happen before. Suggestions?
Oh no! It sounds like you didn't have enough coconut? If you are in the US, it can be deceiving because the bags are sold in both 7-ounce and 14 ounce bags, in the video I'm using a 14-ounce bag, so unless you used the same size, you would need two 7-ounce bags. I bet that could be the issue! :)
@@EntertainingWithBeth Thank you but I weighed everything so that was not the issue. It looked very runny to me as I scooped the dough but I thought I'd trust the process. My husband is currently eating the one big ugly mess though.
@@EntertainingWithBeth Tried these again 'cause clearly I screwed up big time the first go round. Weighed exact amounts, made sure the whites were very stiff peaks, used my oven thermometer to ensure my oven was the correct temperature and got the same disappointing results. Apparently I am completely unable make a 6 ingredient cookie!
could I use coconut condensed milk instead? I need. a lactose free option
Oh interesting! I didn’t know there was such a thing. As long as it is condensed and the same type of consistency it should be OK! But double check that it’s sweetened because if it’s not you might want to add about 2/3 cup of sugar 👍
Can macaroons be frozen
hmm I've never tried that with these, but I can't imagine why not? I bet they'd be OK!

You leave them out. The cookies would be dense but still delicious
