Sam. There used to be a place in Phila that made a breakfast pizza. It was regular pizza dough but it had scrambled eggs, american cheese, bacon, cooked diced onions. home fry type potatoes...all breakfast stuff. It was out of this world. Very thin crust. Might have been a little squirt of ketchup too. Do you do something like that?
Instant pot hack: From the time you seal the pot til the little peg pops up indicating pressure NO cooking takes place. So just before you add the liquid, microwave it for 2-3 minutes to get it really hot, then dump. You will be shocked how fast it comes up to pressure. 5-7 minutes vs 20 minutes.

They had so many different stuffings! Steak, chicken, cheese, deserts! I’ve never seen them in the states, id love if you could do a video to show us how to make them! Hell ya! Love the show brotha
Great egg tip. Makes a HUGE difference when poaching. No more stringy, yucky white wisps of egg you throw out anyway. I saw a similar tip on another show, and that chef cracked the egg into a small strainer to drain it. Then into a dish. I just happened to have one and it works great.

I think he learned the egg white trick from Kenji Lopez doing poached eggs, he puts the eggs in a wire mesh strainer for a bit and all of the watery white runs away making a nicer poached egg. You can find him doing it here on UA-cam.

Whenever I smoke a pork butt for pulled pork, even though the bark provides some crispiness, I’ll put about half in a skillet to get more crispy bits like carnitas.
I have been making carnitas for about 40 years now, and I have always browned the pork, then added a sauteed sliced onion, and a can of whatever beer to the pot. S&P, and cook. Now, with the Instant Pot, we can have this scrumciousness in less than an hour, instead of after having cooked it all day. PS: to easily get rid of the watery part of an egg, crack it into a small sieve. 🙂
Mexican nachos are tasty and all but Sam you should made your take on a chilaquiles with some sort of sauce. Red or green, meat or just egg, scrambled or fried so many options

I'll say after comparing both - Slow cooked carnitas are inherently better than the pressure cooker. The flavors meld and merge more, particularly when it reheats for leftovers. But if you don't have the 8hrs to let them simmer, it's a good alternative.
Heres a challenge for you Sam.I love Nacho's, and deep fried everything. How about you create DEEP FRIED NACHO'S. Like take a crispy flour tortilla bowl, filled with all the nacho goodies, cover with a tortilla on top,and dip in a batter and deep fry. IT SOUNDS SO CRUNCHY YUMMY. COVER TOP WITH EVERYTHING........what do ya say? BTW love your vids :)

Try frying your own chips in avocado oil. That’s my family’s favorite way to do breakfast nachos. Yes it takes a little longer, but you’ll never use commercial chips again for this dish. Huge fan. Cheers!
Breakfast nachos are pretty great mine are generally just chorizo scramble with some onion, cheese, and salsa maybe some times some beans if I have left overs. Breakfast pizza is also great.
Sam you made something similar to chilaquiles, which is an amazing meal. There is a place on 3rd ave Chula Vista called Talavera Azul that makes great chilaquiles, they are only open 8am-2pm. You should give them a try, it’s more enchilada sauce on chips and toppings but is delicious.

I make pressure cooker carnitas frequently and I use one of those cocktail size cans of Coke for the liquid. Just another option.
