Boiling the pepper in its own juice keeps the nutrients intact but when you boil with water like you did … most of the nutrients is gone with the water . Also you can use the water you boiled the pepper as water for the stew base.. instead of throwing away.

I also like using the same oil l used for frying my meat to cook my jollof because of the same reason you gave... the rice looks very delicious and yummy. Well-done my dear.
