Hello from Japan. Actually, our Gyuto (牛刀) should have enough blade thickness to complete the task but this knife doesn't have it. Furthermore, we don't put the mallet (槌目) on Gyuto because fat or blood are remained after cooking then they will cause rusts or stains. Therefore, I strongly believe that this knife maker have never studied our Japanese blade making technique since they started their business.
@@rigajykra3159 That's a good and difficult question. Most of the contents what a good Gyu-tou should have were already mentioned in my past comment. If I should add more... ① The blade should be made with hammered Japanese steels which were well heat-treated. It is hard to judge it is good steel or not but most of good Japanese steels have detailed "Ha-mon (刃紋: blade patterns) which is caused by the process of blade forging. ② The blade should have a flat and recurve cutting edge. We pull the edge when we cut so the recurved edge is essential like Katana (Japanese swords). ③ The wood handle should be better. As you know, Japanenese steel is easy to get rusts. Therefore, you have to clearn and dry after using it. In that case, the wood handle absorbs the moisture inside the handle. Furtheremore, it is easy to change the handle when you need. If you are not in Japan, please send your Gyu-tou to our country in that case.

I actually bought the Forged in Fire 2pc set from Walmart to practice free hand sharpening on. The chef knife is pretty damn beefy! Could make a good beater knife. Sharpened up pretty good to be honest. The only thing that bugs me is that no where (including their website) does it say what kind of steel they use. Which I’m sure means it’s shitty stainless.
It's showing a website at some point in the first half of the video that say "Surgical stainless steel", so yes the same steel disposable blades are made from ^^

Fell for that crap some 25 years ago. Hone it up to some 1-2k grit and get that insane performance until you need to do it again after 10 cuts. No, give me well tempered steel on a good handle. That's all you need
Even in the commercial, there were indications that the knives were not that sharp. Ive used knives in jobs both for food and other materials for a long time. I dont claim to be an expert in knives or knife sharpening, but im good enough to get the job done and even when dealing with cheap to moderate quality knives, theres a huge difference between okay sharp and a really good well executed edge on a knife. And even then, there a huge difference from a well sharpened knife and one that has a really well polished edge thats thin and smooth and consitent fron heel to tip. A properly sharpened knife, when cutting soft food will slide through the food almost as if it isnt there at all, you wont need to draw the knife to make the cut, you can literally let the weight of the knife complete the cut on a downward cut and the slightest pressure on a lateral cut like slicing the tomato. You wont have to use the entire edge to do the cut. The knife in the commercial cutting the tomato seemed really sharp, but the tomato was likely fixed in place as well, im betting the bottles were too. But when they were cutting the cucumbers on the blade they had to really hit it pretty hard. This indiacates an ok sharp blade. If you have to draw a knife through a cucmber or other vegetable, your knife isnt really well sharpened. Even using a carbide drag through sharpener i can get pretty smooth and thin edges on cheaper knives that will cut really really well.
I think i have the same knive, only another kind. 😂 It also calims to be a Damascus, handle looks exactly the same, it only costs about 20$. For this price its not bad.
