    One thing as a Indian filipino who was raised in the middle east there no such thing as lebanese biryani in the middle east, their rice dishes are called Machboos. The swahili guy got it wrong it was introduced to swahili region from indian traders where many till now lived for generations not by persians. Interestingly this dish is a mix from different influences from surrounding regions, the name is of Iranian origin called beryani since persian was the lingua franca in india during the medieval time which means to roast where a fatty liver is kept on top of a large flat bread where it soaks the fat. The Biryani rice dish is indian of origin the dish originates most probably around the central India is the only rice dish that does the layering techniques then at the end mix it . Btw indians and pakistanis back home dont like the term "south asia" since it generalizes how extremely diverse it is, much prefer to be specific that the country its from. India alone has 100s of types of biryani especially how big it is. If theres 2 types of biryani you must try which the video doesnt show sadly despite knowing one in Manila its Hyderabadi biryani (You can find in manila) and Thaleserry biryani ( Available in Kerala,India and the middle east).

    The best biryani I've had in Metro Manila was at New Bombay in Greenbelt. I ate some of the best Pakistani and Indian biryanis in the UK (a big centre for the overseas Desi community), and New Bombay's biryani is right up there. As my father's side are Muslim, and our local mosque in the UK had mostly Pakistanis, I grew up with them as a diasporic half-Filipino eating their families' homemade biryanis, saalans, karahis, niharis and rasmalais.
    The thing I got with New Bombay is that their's wasn't tailored just to suit local tastes, but is there to introduce Filipinos (Bangsamoros excluded since they/we know this) to the richness of Indian subcontinental cuisine. Just make sure to say 'authentic spice level' to get the real heat. I'll give these places a try, but my standards are literally up there.
    And another thing: there is no 'Arab biryani' - their tradtiional rice is called kabsa or makbus/machbus - they also have a smokey type of rice known as mandi (from Yemen). I can cook a mean machboos too, but the spices they use are completely different. I'd say a kabsa/machbus is less 'foreign' to Filipino pallates, since there's no chilli, its slightly citrus-y thanks to the dried limes, and the spices used (called 'baharat') are more for a 'flowery/all-spice' aroma, than a heavier masala based profile.

    • @DonShei
      @DonShei 3 місяці тому

      In my opinion, Pakistani food are superior to Indian food, but I love both BTW. Mandi at Lebanese Pilaf ang paborito ko din. :)

Sobrang adik ko binigyan na ko ng owner ng isang free order ng chicken biryani which i claimed sa shang stall nila noon. Biryani is like indian/pakistani/bangladesh counterpart paella. They are blesses with real spices na hinde (naka tetra packed) kilo kilo nila iniimport ang spices kaya mura sa restaurant.
    That spices are one of reasons why west colonized INDIA.
    Personally, I prefer the northern indian & Pakistani biryani kase maeenjoy mo meat & rice & swabe lang ang aromatics . S. Indian kase is spices na may rice and onting protein.

    Why Chicken is overrated. Sauces are great, chicken itself is bland and dry. I admit it offers better pricing as compared with other chicken stalls kasi it comes with a rice and mediterranean sauce. kakaiiba kaya dinadagsa, pero flavor wise nope. Nagdeteriorate na ang quality because of massive demand.

    As a OFW who's been working in Dubai for 10 years, I'm surprised how a lot of Filipinos have opened their taste for Indian cuisine, especially biryani.

    Why chicken sucks fr. Dry chicken, biryani hella bland, sauces are just far from authentic.

    Sana kasama yung Ricksha Streetside Tandoor. One of the best I’ve tasted and not that expensive. It used to be in Kapitolyo then moved to San Juan

    I'm learning to cook biryani starting with chicken. I buy the spices and condiments from an Indian store in BGC. I noticed most South Asian recipes, don't include chicken skin because of a country's culinary tradition which should be respected.

    If anyone goes here in Kawit or Imus (or nearby areas) a good Biryani place is Manzil Al-Taam.

    I love authentic biryanis. My favorite South Asian dish.
