Chinese Home-cooked Beef and Carrot Stir Fry Recipe

    If you have beef and carrots on hand, try this easy, healthy, and delicious stir fry. It is a basic Chinese home-cooked dish that almost all kids grew up eating in China. This dish is easy and doesn’t require any special ingredients. It is also a good recipe to get your kids eating carrots because they absorb lots of flavors from the beef, and the taste becomes savory.
    Ingredients
    To marinate the beef
    340g / 12 oz beef
    1/3 tsp of salt
    1/4 tsp of white pepper (Amazon Link - geni.us/white-peppercorns)
    1 tsp of dark soy sauce (Amazon Link - geni.us/dark-soy-sauce)
    1/3 tsp of baking soda
    1 tbsp oil to coat the beef
    For the stir-fry sauce
    1.5 tbsp of light soy sauce (Amazon Link - geni.us/light-soy-sauce)
    1 tbsp of oyster sauce (Amazon Link - geni.us/premium-oyster-sauce)
    1 tsp of brown sugar (Amazon Link - geni.us/brown-sugar)
    1/2 tsp of five-spice powder (Amazon Link - geni.us/five-spice-powder)
    Others:
    340g / 12 oz carrots
    2.5 tbsp of oil to stir fry
    5 cloves of garlic, sliced thinly
    3 scallions, cut into stalks
    2 dried red chilies
    Instructions
    Slice the beef into 1/4-inch thick slabs, stack the slabs together, and thinly julienne them into strips. Recommend cuts: beef mock tender, flank steak, chuck, and sirloin.
    Marinade the beef with 1/3 tsp of salt, 1/4 tsp of white pepper, 1 tsp of dark soy sauce, and 1/3 tsp of baking soda to tenderize the meat. Mix well. Drizzle in some cooking oil and stir to coat the beef. This will separate the meat strips so they don’t tangle together when stir-frying. Set it aside for 15 minutes.
    Peel the carrots, cut them into 1/8-inch thick slabs, then thinly julienne them.
    Besides that, slice 5 cloves garlic thinly; cut 3 scallions into stalks; cut a few dried red chilies into diagonal strips using a pair of scissors.
    Put together the following seasonings into a bowl: 1.5 tbsp of soy sauce, 1 tbsp of oyster sauce, 1 tsp of brown sugar, and 1/2 tsp of five spice powder. Mix well.
    Turn the heat to high and heat the wok until smoking hot. Add oil and swirl it around to coat the bottom.
    Add the marinated beef and spread it out. Carefully loosen the strips so they don’t tangle together. Stir over high heat for 2 minutes or until nicely charred.
    Remove the beef from the wok. Make sure you tilt the wok so you can leave the excess oil behind.
    Add the garlic, white part of the scallion, dried red chilies, and julienned carrots. Stir over medium heat for 3-4 minutes or until the carrots are slightly soft.
    Introduce the beef back into the wok and pour in the seasoning sauce. Last, toss in the green part of the scallion. Mix well and serve with white rice.

    Can I just say that I love your recipes because you explain what steps do? A lot of the time, people just say "add this now", but you go out of the way to just give that five seconds of explanation to make me understand what and why. You also always tell what not to do and how doing the wrong thing will affect the dish, and it's just so good for us that don't get the "do as you're told with no explanation" kind of mindset.

    Carrots are one of those universally liked foods. They are sweet, crunchy, and adapt easily to whatever cuisine you like. They even become desert. I’m embarrassed to admit that I did not know the whole plant is edible until a few years ago, as I was giving the carrot greens to my daughter’s horse along with the peels. They make a great pesto, they add carroty flavor to soups, and the young greens make a great addition to salads.

    I use the apple skins peeler to peel strips of carrot which was very fine and broad for easy cooking and chewing.

    Hi Mandy. I've been a subscriber for many years and share your passion for cooking and learning. My son was recently diagnosed with some food allergies and the only allergy that has been a challenge to find substitutions for is soy. We have been using coco aminos for some of our favorite recipes, but it just doesn't taste right. Do you have any advice for a soy sauce substitute? How do we cook with these substitutes differently?

    Just what I like,a simple, easy to prepare dish with good flavor, and nutritious too. I find withAsian cooking, I’m eating a lot more vegetables and less meat because meat is soooo expensive? Of ourse, to me, the sauce is the star ingredient.

    I do stir-fry now. Because I'm on a diet. And it's really cheap. You can buy a bag now of bean sprouts, water chestnuts and mushrooms. It's about £2. And you just add meat etc.

    Unfortunately there are a lot of people who don’t eat carrots (raw or cooked) but fortunately I am not one of those people. I will be making this for dinner on Saturday.

      @@carledorsey I love carrots, but I am curious why some people wouldn’t. It honestly doesn’t seem to be a hated veggie compared to onions and mushrooms. I know a lot of adults that don’t like those veggies.

    I didn't get the same result as you, with the beef. Mine just off juiced into a puddle. I had the oil very hot, but it took me 10 or more minutes to get the meat right.

    I haven’t ever seen anything labeled light soy sauce or dark soy sauce on our shelves. It just says soy sauce. Any suggestions?

      I believe that the soy sauce you find in most grocery stores is considered light soy sauce. The dark soy sauce I’ve only ever found in an Asian grocery. It’s much thicker, like a syrup, but not sweet. To my taste buds it has a deeper flavor, but is used sparingly for it’s darker color.

      I would just use the regular one in this case, the overall taste shouldn't vary a lot.

      My research says dark soy is sweeter, usually containing some molasses. It's mainly added for color. It's a bit thicker, less salty and fermented longer, with a deeper soy flavor. Using more regular soy sauce with a small amount of molasses is a good substitute. I've never seen dark soy sauce in a grocery store, and I have no Asian markets near me. I've considered getting some online, but haven't done that yet.

    Always find your dishes delicious and quick but my family likes alike of gravy/sauce so I have to triple your sauce ingredient.

    There is NO WAY that is only 12 oz of beef. That wok is full! That has to be at least 2lbs of beef there.
