  • Today we're going blackberry hunting and then making our family's favorite summertime treat - Quick & Easy Blackberry Cobbler! The recipe can be adapted with most any fruit (even canned peaches!). If you've never made this, please promise me you will. And don't be like me and forget to buy some vanilla ice cream to go on top. Even though it doesn't need it, it sure makes it that much more delicious. Happy Cobbler-ing y'all!

Very reminiscent of my childhood. We had a huge field of blackberries just north of the house. We had a pony that we would stake out in various locations to trim the lawn, she loved getting into the blackberry patch and eat them thorns and all. My grandmother would go out and steal the berries from the pony to make jam. But then she would always go out to where the pony was and share it with her. She would always complain that the pony would take more than here fair share, we would laugh at her and remind her the berries were the pony’s to begin with. Never forget the sight of her trying sit next to the pony to spoon feed her and fighting to keep the pony’s nose out of the saucepan with the jelly.
BTW almost forgot to say, your treat looked absolutely yummy.

you can use all purpose flour you just need to add 1 1/2 to 2 tablespoons of baking power per 1 cup of flour. 2 tablespoons will make it rise more

Out here in Western Washington,we have 2 different varieties of blackberries. One is ready by July 4. They are small and grow on the ground. It takes FOREVER to pick enough for pies . They are the sweetest and have less seeds. The other is called a Himalayan blackberry. The berries are huge any do not take very long to pick. I make cobbler and jelly from it. They have lots of seeds. They are everywhere and an obnoxious weed.

FYI gloves and a stick should always be used to pick blackberries. Snakes love to eat blackberries. My grandmother canned over 300 jars of food every year. 25 years after her death we had blackberry jelly and green beans. She was a true pioneer woman. She rode back to Texas from New Mexico on the back of a covered wagon. I loved her and she was an incredible woman. You remind me of her with all your passions. LOL

I had a grandmother like that born in the late 1800's. I remember her big vegetable garden and picture her hanging clothes to dry on the clotheslines outside the farmhouse. She also wasn't afraid to chase a bull back off the dirt road back to the pasture. Those were the days...

Meredith... You made that cobbler backward and in the wrong pan. You need a deep pyrex casserole dish, one that you can put a serious amount of blackberries in, at least two inches deep, pour the sugar over the top of the berries, then pour the batter over the sugared berries. Only put 1/4 cup of sugar in the batter and the remaining 3/4 cup went over the berries. You've got to have enough berries in the cobbler so your eyes will roll back from the wonderful taste of it all. Get the rest of those blackberries and freeze them in ziplock bags, in per-use quantities. I haven't had the chance to pick berries since May 1992, just before I moved to Indiana from Ohio. There was a big patch behind my folk's house and I filled a five-gallon bucket. My grandmother helped clean them to make sure there were no Japanese Beetles in them, then we froze the berries in 1/2 gallon milk cartons. Each carton was a cobbler!!! They didn't last me long at all.

Being your icecream make is broken here's a recipe the kids might like helping with...
Homemade Ice Cream with only 2 Ingredients (No Machine)
    Ingredients:
2 cups (16oz/450ml ) heavy whipping cream, cold
    14 ounces (1 Can/ 400ml) sweetened condensed milk (fat-free or regular), cold
    1 teaspoon Vanilla Extract (optional)
    Instructions
Place sweetened condensed milk in the fridge to keep cold.
Using a hand or stand mixer fitted with a whisk attachment, whip the cold cream on medium/high speed until soft peaks form.
Turn off the machine and pour the cold condensed milk into the whipped cream.
Turn the speed up to high and whisk until the mixture is thick and stiff peaks form. Turn off the machine and stir in vanilla extract (optional)
Now you have your ice cream base you can add in your desired flavors and fixing.
Transfer your ice cream mixture to an airtight container and freeze for a minimum of 6 hours or overnight before eating.
Keep stored in the freezer for up to 6 weeks.

Well, that didn't work. I tried your cobbler (blueberries instead of blackberries). Didn't come out very well. My wife and I both felt like something was missing. I did it in a 9x9 baking pan. Oh well, will try it again. :*(

Also, I have not been sleeping well....had weird dream yesterday.
You were in your kitchen reading my article in FW....how strange is that !
    * There was no emoji for blackberry, this is more a red current but I’m sure you get the idea. Smiley emoji.
Thanks for the shout out, really nice of you.
