- sometimes its hard to find curry leaves in some seasons. So if you store curry leaves like this it will be very handy in the kitchen and you will always have fresh curry leaves ready.

This method works wonderfully and is my most favorite. Tried it (among various other methods that I came across when googled). Thanks Ms Rinku. The pros: The leaves in the freezer continue to be green, tender & fragrant even after 2 months. Cons: The drying time in the process can be a little more efficient. The changes I made: I cut the small branches, washed, dried them by hanging them upside down in the mild sun or shade even, for 15 to 20 minutes. Once the branches were dry, then I separated all the leaves, oiled & put them in the freezer. This method saved me a LOT of time & energy.
Similarly, for cilantro, I store them in glass tumblers with water( like cut flowers in a vase) in the fridge(not freezer) and it stays perfect for a month at least. Just keep adding/changing fresh water to the glass whenever the level goes down.

I would be afraid of toppling the glass when taking out something else in a hurry... open glass of water inside the frige will definitely not work for me 😓
This is a new process I learned today for storing curry leaves. I have so much trouble with their shelf life and I cannot find them all round the year either. Thank you so much for the information.

Hi Rinku I wash the leaves and strip them off the stalks. then I air them on paper towels to dry off water. I toss them in a spoon full of oil and bake it in a moderate oven till they are just crisping up. I remove, cool and store in airtight packs on kitchen shelf. stays aromatic for months together. Use as required. Please try and let me know.

I normally roast the leaves in a pan over low fire, powder them and store in airtight container in the frige...use a spoonful or two of this powder whenever leaves are needed. Though the final product does not have the aesthetic effect of leaves, the flavor is as good as fresh leaves with added nutritional values since we tend to remove the leaves while eating, but not so with powder

It is usually sold in a bunch, and I always have more curry leaves than I need, and the remainder loses its fragrance by the next time I need it.

Yes you can...you can freeze it and use it daily as many as you need and put it back in freezer..

i used vegetable oil..you can use any oil or ghee ..purpose of oil is to coat the leaves to trap the moisture inside..

no you dont need to thaw the whole bag ..you can take out as required. .oil will keep it soft ..

Hi.. Drying it for one hour.. Still there'll be bit moisture in the leaves na.. Is that OK??
yes for freezing little moisture is ok but it will prevent the oil to stick onto it so i would suggest take a dry cloth napkin and just rub leaves on napkin which will absorb extra moisture..

by rubbing the oil the moisture will lock inside and that will prevent the smell and fragrance

Hi +Charitha Samarasinghe , I personally never tried it but you can give it a try. Pandan leaves also little bit crispy ( with moisture in it) so you can try with applying oil or ghee on the top and then store in a ziploack bag. Basically oil/ghree will make a coating on top of leaf which locks the moisture inside and when you store it will stay fresh. so try with pandan leaves and if you do please share your experience with us. So it will be beneficial for others too :)

if you properly coat it with oil or ghree then you will get same flavor even after leaves are frozen

+Subasini Cole you can use any cooking oil..the purpose of the oil is to create a coating on the leaves. You can also use ghee if you want.
