TACO TUESDAY STEP ASIDE: BIRRIA QUESADILLAS ARE IN THE HOUSE

We have made these a few times now and love them each and every time. They seem like they should be harder to make than they are. We had a little beef left over that we froze. Ellinor was the absolute biggest fan. She is weird about spice at times, but she chowed down 2 full quesadillas!!!! This should definitely go in your Taco Tuesday rotation!
Ingredients:
Beef Roast 3-5 lbs
salt and pepper to season
1 lb roma tomatoes (about 4)
4 ish Guajillo chiles
4 ish ancho chiles
2 TBSP vinegar
4 cloves minced garlic
2 bay leaves
tortillas
cilantro
oaxaca cheese
