I would check your injector O rings, or just put new seals. My kat setup did the same where it ran rich and rough at idle and it would blow injector o rings and then drip fuel into the cylinder. Making it run like crap at idle and sputter randomly, along with running rich. Its like $30 for a set of o rings and pint caps.
check coolant temp sensor wiring and connector. on my ls1 the coolant temp sensor connector on the harness was shorting out and was reading singal too high. cut and spliced a new connector and new sensor and problem solved. you might be over looking the problem.
I know you’re into jdm and all that but you obviously have some knowledge with other engines and ls swapped your truck. Why not put one in here? You can do a nice all motor build and have something reliable that won’t be blowing headgaskets or anything. Maybe you just got unlucky with this one and you’ll fix it but would you consider going ls? Good luck with the build either way.

If that turbo is stock and you're ecu is stock tuned for the stock turbo then all you're missing is the stock mass airflow senor that is calibrated to accept the extra air from the turbo so I'm not sure if you have the mass airflow senor on the intake or I'm tripping or I'm not even sure if stock sr20 even come stock with a turbo 😂😂😂

1 never use a key ring gapper there junk use feeler gauge .those rings are not even close and you bend plug strap at an angle cause every 1/32 of an inch the ring Gets Bigger!!!!!
