    Welcome to Week #4 of my 2023 Pantry Challenge! I did "NO SPEND" on groceries for the entire month of January!! I was happy to use that extra money to pay off the Christmas bills 😃💰 Things are going really well and I still have quite a few items that I want to focus on and get used up so I'm going to CONTINUE INTO FEBRUARY! We are approaching 5000 subscribers so fast 😳🥰and I'm starting to think about a 5K cake or dessert celebration video! 🎂🍰🎉 LET ME KNOW in the comment section if you have an idea for a great 5000 SUBSCRIBER RECIPE idea using AT LEAST ONE INGREDIENT from my pantry challenge pantry! Thank you all for the GREAT RECIPE IDEAS, COMMENTS and LIKES on the videos! It makes a HUGE difference on the channel (whether the video gets shown to more people and things like that!)     I always add a small handful of oats to my smoothies. Maybe try red lentil fritters? You could make a dill dipping sauce for them with the yogurt.

      I’ve heard of putting oats in smoothies but I’ve actually never tried it! I always imagine it just makes it taste….gritty? hmm I should give it a try! Thanks for the idea 🙂

    I'm going to use my old'ish oatmeal packets because of you. I think apple cinnamon ones with some old'ish raisins might make nice muffins!

    Excellent…I’m going to try lentils in chili this week! I’ve got two bags to use up in my own pantry challenge (which does not remotely include not going to the store…I’ve noticed I have been spending less per week on groceries though! 👍🏻👍🏻)

      Hey Sarah! I’ll definitely be throwing lentils in chili more often! A great way to bulk up and half the ground beef! Your “pantry challenge” can have any kind of “rules” you like! 😜😃 It’s great to be saving money this time of year anyway we can!💰

    My husband hates beans. Raised as a meat and potatoes man. I’ve been sneaking beans and corn in the Chili. Plus my kale. lol. Thanks for the video. ❤

    You could drain the yogurt through cheese cloth to get a thicker yogurt.

      Thanks for the tip. I've often tried to imagine this...doesn't it just pour right through cheese cloth?? I think I'd have to have a LOT of layers to keep it from doing that LOL

    Ok Tex-mex scrambled eggs sounds awesome. I haven’t been doing a no spend, however I have been doing a low spend. I have a very well stocked pantry and freezers and have been trying to be more conscious of spending. Thank you, one fellow Canadian to another

    My mom use to make peach cobbler when I was young. Canned peaches..juice and peaches, in the bottom of a dish, mix bisquick mix and drop biscuit dough over the top of the peaches in blobs. Top with a little butter and bake until the biscuits are cooked. It was so good! When I saw your peaches the memory just came to me. Loved the video!❤

    I think my grandmother had that same bread machine! I loved her bread but she used to pull it out and bake it in loaf pans so it would fit into her toaster.
    Love these recipes and ideas for meals! With those Graham crackers, the jello, and the marshmallows, you might be able to make a key lime pie type dish.

      It's a great machine! There are quite a few just "dough" recipes for the machine that you can then bake in the oven! If you google the bread machine you can get the user guide with all the recipes!

    Awesome week! If you have a cabbage, corn flakes with butter on bottom of pan, layer of cooked cabbage, then creamy layer of something - don't remember what but also crumb topping It is so good and the creamy layer really makes it perfect with cabbage. Try whole wheat pancakes rolled up with sausages and some syrup - like a breakfast sweet roll. I can't wait to see what new creative sweet things you come up with. So fun!

      Yay! Great to have you watching mary :) Great suggestions! Mmm your cabbage sounds yummy and the pancake with sausage and syrup is fabulous! Usually my breakfast just accidentally mingles on my plate like that LOL Maybe I'll just put together a tray of sweets! There has been some great ideas :)

    Before my challenge started, and I'm using stuff primarily from my freezers, I had bought bananas, apples, oranges, potatoes, and onions. All I've bought since Christmas Day is milk, medicine as needed, and animal feed. I've been making our own fries and chips from the potatoes....there's no going back to the store bought ones now. I took a beef roast and made roast beef sandwiches with it tonight....no going to Arby's or where ever again. We've had a lot of interesting meals, desserts and snacks and our freezers are starting to be managable again.

      Also, I've got another month or so to deal with. I may have to buy meat and cheese, but we've also got full pantries. We'll see.

      That's great! Good idea to stock up :) I was visiting family over the holidays and didn't do another grocery haul so I'm pretty low on some dairy items and fresh greens but other than that we are managing pretty well. I'm missing quick, easy meals so I might focus on those this week...take a break a bit maybe! I love making my own fries! It sounds like you're having fun and doing a great job Suzanne! :D

      @@JessicaWanders We haven't had a salad since New Years eve....we ran out of most of our fresh produce quickly. My son got desperate yesterday and went and bought fresh broccoli and nectarines....as of which I don't eat either, but he loves them. LOL. I'll buy more fresh produce around here around first of March when the "good stuff" starts to come in.

      I think I have a tiny bit of iceberg and a sad head of romaine that are hanging on lol Everything is very pricey still this time of the year so it's a great idea to wait a bit for things to start arriving! I've been watching for grapefruit to go on sale but I haven't seen anything yet...

      Ohh that sounds unique! I'll check that out! I haven't tried making a porridge out of the semolina but I tried it with corn meal and I really enjoyed it! I might have to give it a try! Thanks for the suggestion :D

      I agree! I wanted to try the recipe as it was laid out but I always fry my ingredients and then add eggs 🍳 It was still very tasty though 👍🏼

    It seems that stuffing mix has quite a few uses. That is good to know.
    I wonder if the people Mr. Wanders works with gather round at lunch time to see what inventive concoction he has for lunch? He is quite supportive of your recipes, and only occasionally has to add red pepper flakes or another supplement to his portion.

      The stuffing mix is great to add bread crumbs and flavour to lots of things! He is always so supportive of what I make! He's really a good sport (even after decades!!) about trying all my new ideas LOL Now there are so many more ideas with everyone sharing and he's been nothing but really intrigued!

    Hi Jessica! You’re making a lot of progress! My pantry is an absolute mess! I need to take the time to get it organized. The cherry pie filling and the graham crackers would be great ingredients for a cherry cheesecake! Thanks for the recipes! (Hugs)

    I made the muffins with the old fashioned oats I’m trying to use up and they were really good! I don’t eat eggs so I used a 1/4 cup of apple sauce instead. The muffins turned out really really yummy! Will definitely keep them in the rotation

      They were super light and filling. I took some for a snack and they held really well. I did bake them at a lower temp. 475 seemed too high and 350 worked perfectly

    I always heat my onions and beans before i put the eggs. We make this with broken tortilla chips mixed in. But really TexMex is usually pinto beans.

      Great info! I've only recently tried pinto beans. I haven't had much luck growing them in the garden and I hadn't bought them before. I just called it Tex Mex because that's what the recipe was called that I was "loosely trying to follow" lol One day I'll make it down there and try some real stuff! :D

    I must confess that I get a big smile on my face every time you say "a recipe I'm loosely going to follow." Love it. You're being very creative, and I would have loved to try that mung bean soup. When we lived in the Philippines we ate a lot of mung beans--cooked with tomatoes, onions, spices, and served over rice. Your chili looked great. Here's a tip for opening a little can of tomato paste: open both ends and use the one end to push the paste out the other. Mom taught me that years and years ago. Very good video!

    I’m in my own 1st time pantry challenge and it’s going pretty ok. Im now on my last loaf of store bought bread so I just made up a monster batch of potato dough bread. I have some weird things to use up too, LIKE RANCH SALAD DRESSING! Thanks for the idea. It will go well for me and really change up my chicken or pork chop/steak game.

      Awesome! I have one more store bought bread in the freezer that I’m saving 😂 Bottled Ranch Dressing always go on sale for cheap but it’s hard to find good recipes for it! It’s always the seasoning packets! Happy to share what others have shared with me 😃 There are loads of great ideas in the comment section of the videos! A goldmine of great ideas 👍🏼

    You are right that it is harder to hide the skim milk powder taste in yogurt.I find that adding another cup of powder helps to thicken it up. Come morning, I add 1-2 teaspoons Vanilla extract before setting up in the refrigerator. The vanilla and setting up time both reduce the taste of the powder. Hope that works for you

    Are you guys cooking eight eggs for two people? Maybe I should watch the rest of this video… But this seems like an enormous amount of food for two people I would make a half of this recipe… Even though it does look delicious

      It was a lot LOL Mr. Wanders will eat a lot if I make a big meal though! I ate some for breakfast and then some later too! It would definitely work as 1/2 the recipe!

      Scrambled eggs warm up really well. I make a big batch of what we call "dirty" eggs and I take them to reheat in my lunch. I typically put in peppers, mushrooms, leftover roast beef, hot dogs or ham, and cheese. It's fun to have breakfast at lunch :)

    Great week Jessica. The eggs looked so good. I also prefer to bake muffins in silicone. They do come out so much better. I'm really intrigued with making yogurt. I've made a soft cheese before but never yogurt. Seems like something I should try in the future. The chili looked really appetizing. I've never cooked with lentils before. Chili seems a great way to use them up! Thanks for the video.

      Hi Melanie :) You should definitely give the yogurt a try! I haven't gone back to buying it (unless I accidentally run out lol) since I first tried it! So easy and really quite a bit cheaper! I hope you give lentils a try too! Canada is the world's #1 producer of lentils :D (45% of the world's lentils!) So glad you enjoyed the video

      Seriously?!? I did not know that about lentils. You mentioned that you would have preferred green lentils in the chili. What is the difference. I am a total lentils newbie.

      If your mum doesn't have her bread machine anymore try looking thrift stores but plug it in before you buy one to make sure it works first

    It was interesting that the skim milk powder worked in your yogurt. Who knew! I throw dehydrated spinach or kale and or dehydrated cabbage in pretty much any soup I make works great .if you make gnocchi you could make a gnocchi soup as well and use your kale. I used up home canned celery, green beans, and carrots in a vegetable lentil soup and they worked great so I was excited as I don’t really enjoy any of those veggies canned so now I know how to use them up

      Hi Susan! 🧡 Honestly I thought it wouldn’t work at all for yogurt! I’ve always been reluctant to waste the powder on trying it out 😂
      I’ve never tried canning celery! Interesting! I don’t enjoy carrots canned either 😒 I’m trying to enjoy them for as long as I can in the fridge and I froze a whole bunch of my harvest. Green beans I prefer frozen as well but of course they don’t keep as long in the freezer 🤷‍♀️ It’s a trade off. Your veggie lentil soup sounds great 👍🏼

    I was thinking you could use the biscuit package with the peaches. Then use some powdered sugar and water to make a "topping". Make them into muffins or a 8x8 pan. Thanks for sharing!

    You are doing great. Looks like you and Mr Wanders ate very well. I've noticed a lot people, as well as You Tubers are digging out their bread makers. We have made ours for several years now. Saved us a fortune. Looking forward to your next video

      Thanks kathryn 🧡 I’m on again/off again with the bread maker…it’s sometimes hard to know that you’re going to want bread 4 hours from now 😂 AND I find that it doesn’t keep as well. Probably because it doesn’t have all the preservatives of store bought bread! I always end up using it in the winter when I don’t want to run to the store and you get it saves a ton of money! 👍🏼😃

    In baking quick oats and old fashioned oats are interchangeable. I've not had any issues with using the "wrong" one in recipes

      Good for you! I am missing a few things, like fresh milk and cream, but I haven't broken down and ordered groceries...yet! I'm enjoying using up things in the pantry and putting the extra money towards bills so it's keeping me really focused! Onwards into February!

    You could use the crackers to make fire crackers I'm sure Mr wanders would like those, they're good with cream cheese. They are a snack though not so much a meal.

      Yes! It's really common to get the maple sugar flavoured beans here but I prefer the British style beans for breakfast :D

    I have to say I have o ly made yogurt 2 times but I like greek yogurt so I strain it through a cloth and seperate the whey. I have been using the whey to replace milk in recipes. It's so yummy.

      Thanks for the tip. I have heard of this but imagined that cheesecloth wouldn't work lol Strain it through a dish cloth or old shirt or something I guess? I haven't tried it but I might have to look into it more! Thanks for sharing :)

      @Jessica Wanders I actually used a potato sack dish cloth the first time. Works like a charm. Mine comes out more like sour cream but I let it strain for like 8 hours. If you want it less thick strain less long.

    I know this isn't a cake but could make magic cookie bars. It is butter, graham crackers, chocolate chips, walnuts, coconut and sweetened condensed milk.

      @@susanchoja6800 if butterscotch chips are added they can be called seven layer bars. A dessert with many names. Have not heard of them called hello dolly bars. 🙂

    The TexMex egg dish...draining the tomato juice is odd, since adding it would have stopped your eggs from cooking too fast. I also would have changed the step order of ingredients. Eh. Looked good though. Agree with Mr. W...LOTS of cheese! Whew. 😄
    5k dessert....jello something? You could do one of Midwestern Mom's "Minnesota salads that aren't really salads" as they use jello A LOT! (Maybe a callab? 😉)

      Hey Sarah 😀 Ya the eggs were still tasty! Cheese fixes everything lol I’m going to check out those jello salads (sounds like something I’d love!) and the kitcheree too! I really enjoyed the taste of the cooked mung beans and the soup grew on me actually but I’d love to try it with fresh herbs! Always lovely to hear your thoughts 🧡

    My favourite meal l like when am buy myself no one home is fried egg heniz baked beans with home made chips you call them French frys bit chunky that skinny French frys and bread and butter to dip my runny egg and chips inside bread before l dip it in the egg

    Hi Jessica, I wear my hat in the house, too. I spent $109 for food this month for family of 6. budget is $150. I chose to not do no spend because my kids all drink milk and we all like fresh produce.

      Hi Kdonor! A hat keeps you sooo warm!! I don't mind it at all! That's an amazing budget for your big family! Great job!! I am missing fresh milk but I don't mind our frozen veggies from the garden so far. I think a quick very low cost trip to the store for some milk and cream is in order before we head into February!       Yeah, we did no spend last January and while overall it was good, just since it's high germ season, I really want to encourage the fresh fruit especially citrus eating here. And my youngest who is 6 is a milk conisseur and can't handle the taste of powdered milk (though big siblings are fine with powdered milk in hot cocoa) . I'm so glad the pineapple carrot salad worked out! I should make that, too.

    I use Cesar salad dressing in my pasta. One of my summers I went to my pantry and pulled out past, salad dressing, and a can of tuna. It turned out good. I’ve done something along these lines with a can of spinach. I just wished I had wrote that down.

      @@JessicaWanders I cook whatever pasta I have on hand. I really like the bow tie. Drain like usual add in the tuna/chicken (if you have chicken use) and the Cesar dressing. I put back on the stove on a low heat only to warm up the tuna. I’m sure you can add other items but I’ve never tried it. I’ve never thought about until just recently after watching some other channels who does this kind of cooking.

    Rotex is a stable in my pantry. It will go on sale once or twice a year at my store for $1.00 for the no salt (I try to limit salt). I buy 10 to 20 each time it's on sale. Hot ones are better in my opinion.

Air temp is Celsius, oven is Fahrenheit, pool temperature is Fahrenheit! So many more things are a mix of imperial and metric for me!

    How quickly do you try to eat your home canned food? I started canning August 2021 so nothing is very old yet but I thought I should probably get all the '21 food eaten this year. What do you think?

      I certainly like to use it up within two years but if I don't I don't worry about it too much. Jams and Jellies are great for years without a problem, pickles too. The lid companies usually only guarantee the lids for a year and a half and the nutritional quality starts to go down after about two years. If you follow safe canning recipes and your jars sealed then the contents are edible as long as they stay sealed as far as I know. I do like to have empty jars to fill up with more things in the next canning season :D It's not a rush to use it up in a year.

      Hi Alicia :) I haven't ever tried straining yogurt...what are you thinking about using to strain it? I've heard that it thickens it. It's an interesting idea!

      He does eat everything! I always suspect he isn't being totally honest with me lol After all this time, I think that we just share a lot of the same tastes :D (And he is pretty grateful that I make him food!) One of our sons is kind of a mildly picky eater but I just kept giving him the same stuff for dinner! Now he claims he likes mushrooms! hahaha

      Totally agree! I have a tiny space heater in my office if I really need it but otherwise it’s a waste to burn through our firewood stockpile when it’s 10° out. I can’t handle it that hot in the house! 🥵
