- It's Week #5 of my 2023 PANTRY CHALLENGE! My goal is to feed myself and my husband by just using food from our PANTRY and FREEZER. I haven't bought any groceries so far! I'm going strong into February but I think next week might be a "Low Spend" Challenge! We can't have Mr. Wanders running out of coffee and he is currently boycotting the milks and yogurts in the house!! My goals in the challenge will still be to use up older (or less popular) canning and pantry food items that are at or near their best before dates or have just hung around for too long...probably just with a few more dairy items... LOL
In this video I try some viewer suggestions along with some tasty BREAKFAST RECIPES, LUNCH RECIPES AND DINNER RECIPES! I love all of the great suggestions! It really does help me come up with interesting meal plans for the week. I hope everyone is excited to see me continue with this challenge through FEBRUARY!

Hi Jessica, when you use crumbs on top of casseroles, try mixing them with melted butter or olive oil, stir well then add to the top. It will make them brown and crispy. I make the original cornflakes chicken all the time. Delicious. I look forward to watching all of your episodes. Thanks 😊

A little hint for a nice, golden , crispy top on baked macaroni-Toss the crumbs for topping with melted butter first. The more butter you use, the deeper the color will be. For additional wow factor, the trick is to use a pinch of paprika in the butter. Cheers.

Definitely keep going! Maybe do $20-$30 and see if you can stretch it over the entire month! As for the squash, maybe use it as a replacement for pumpkin in some whole wheat pumpkin bread or muffins! If you have chocolate chips, you could combine it with the sweetened condensed milk to make fudge. The cherry pie filling and Graham crackers scream cheese cake to me. Either or both are perfect for Valentines day.
I've been dying to do something cream cheese but I don't have any unfortunately :( I might have to put it on the small LOW SPEND list if I can find some on sale! Thanks for the great suggestions! I pretty much use pumpkin and my winter squashes interchangeably! I find the Hubbard squash just a sweeter pumpkin! :) $20-$30 would definitely cover the month!
I roast squash halves and fill with stuffing mixed with sausage then brown in yhe oven.

Suggestion for the stuffing... Use it crushed up as the breading on chicken or pork cutlets. OR put it in the bottom of a pan, top with some chicken or pork and pour some broth over the top and bake for chicken and dressing or pork and dressing. OR make up a package of it, pound out some chicken, pork or beef and use the stuffing as filling (hold together with a toothpick) brown them and put them in the oven to finish cooking and turn any drippings into a pan sauce for the rolls.

You could make squash muffins. They taste like pumpkin bread muffins. Butternut squash soup would be tasty too!

When you plan to add dehydraded greens to a recipe you may want to add a little extra liquid to the recipe. Dehydrated food absorbs a ton of liquid as it cooks.

Hello, I see stuffing pumpkin casserole, lentil pumpkin curry over rice or noodles, pumpkin muffins or waffles. Whole Wheat pizza crust or calzone, Biscuit can cover any left over mixed in a casserole as a cottage pie or pot pie. I would keep it a low spend week like $10. And use every bit up saving your groc budget for a refresh shopping with intention of what you want on your shelf. I saw another channel use clear gift bags from dollar tree to organize your meal ideas into, then you can count the bags and see how many dinners you have in your pantry. Your doing great !

A vegan replacement for Parmesan cheese is a mix of breadcrumbs and nutritional yeast.

Parmesan cheese replacement. There's a product out called VitaLite. They make a vegan parmesan cheese. Or you can use nutritional yeasr. 🥰

If you warm up your Pita Pockets before trying to fill them . They will peel apart very well without breaking.

Warm the pita bread by putting a damp paper towel around it and microwave for 20 seconds. It opens easily

Welcome to February Pantry Challenge!! I haven't bought any groceries so far but I think we might need coffee just to keep the household happy... LOL I am missing enjoying a big glass of milk and our new yogurt is good but...it just isn't the same so a LOW SPEND shop is probably on the agenda for this week if I'm going to keep going... LET ME KNOW in the comments below if you're still interested in seeing a LOW SPEND version of the challenge for the rest of February AND how much money you think would be acceptable! I'd love to hear your thoughts! Should we just feed caffeine to Mr. Wanders and keep going? LOL
Valentines day is coming and we have some days off scheduled 🥰💝 I'm thinking about making a treat for Valentine's Day! Surprise Mr. Wanders with something special from the pantry! I'd love to hear your favourite VALENTINE'S DAY treats! I’m glad that I still have some sweet ingredients in the pantry 🍰🧁
$50 is a good amount! Can get some much needed coffee, milk and veggies :) I love low spend challenges!
I would love a low spend challenge as well, and I think 50.00 is a good amount but whatever you need to spend to get through is ok with me 😊
Instead of setting a random low-spend budget, maybe shopping list of a few specific items you want/need and only buy those items. So coffee, yogurt, milk, etc. Then just report how much you spent on those pantry fillers.

@@mentalutopia I absolutely agree with this, and it's how I almost always do my shopping. Plus, Jessica, you are the one person who I always watch with the challenge videos. I love your sense of humor and the natural way you present everything.
As a southerner in Texas let me just tell you that your cobbler came out just right. It's supposed to be gooey. it's supposed to have liquid in it at the bottom. That's why it tells you to put the peaches on the top with the liquid as well as having so much butter.
There's nothing better than warm peach cobbler out of the oven with a big scoop of vanilla ice cream on the side. That is perfection.
Also you can use other fruits and use that same base. For example an Apple cobbler is delicious. Or a blueberry cobbler, or raspberry.

When using your knife to scrape ingredients that you've chopped or cut into something use the backside of your knife vs The sharp blade because using the sharp blade side is dulling your knife .... just a hint 😊. I have been binge-watching you and this is something I've noticed throughout and I thought I'd just let you know that you could save your blades if you use the backside scrape with.

Hi there, I saw a person in my budget group use stuffing mix as a filling for sausage rolls making them vegetarian sausage rolls. So if you have pastry that’s an option to try 😊

Nutella toast with the strawberry or raspberry jam together is the ultimate combo. If you haven’t tried it we eat it for dessert some nights as it’s just that good
Ohh sounds yummy! As soon as you add Nutella it just seems like a dessert right away! :P But we'll keep saying it's super healthy haha
You can put cornflake crumbs in bread. Sort of like a substitute for cornmeal in an Anadama bread. I usually throw random cereal bits from the bottom of the box in bread all the time. ESP bran flakes and shredded wheat chaff.

You pronounced my name perfectly. Glad you liked the cobbler. Cherry pie filling…..homemade pop tarts. Wonder what those dried cherries would taste like on top of your Nutella toast? In a crock pot, raw chicken breast, top with stuffing mix, top with cream of chicken or any cream of soup (I like cream of celery better.) Cook until the chicken is cooked. Shred chicken. Wheat flour??? Maybe dough for bread or breakfast or savory pizza. Not sure. Looking forward to what you come up with!

I feel what you’ve made there that you were calling a peach cobbler is a peach clafoutis. Sounds good though! Margarine is much worse for you than butter stay away from it!!!
Hi Wendie! I love clafouti! I used to make plum clafouti every year before my poor plum tree died :( I'm not as familiar with cobblers so I just tried to find an interesting recipe that said "cobbler" LOL It was definitely tasty regardless
You could try using some squash, cooked drained,and mashed and make potato squash gnocchi? Never tried it but it might work? I also sometimes make a butternut squash gratin kind of thing. Peel squash, cut in slices, put in casserole dish in one layer, pour melted garlic butter over then sprinkle bread crumbs. and Parmesan. Bake. My husband loves to put mashed pumpkin or squash in his Mac and cheese along with sautéed onions and peas. Then again he will put cold mashed pumpkin on toast so you know to each his own

Easy recipe for stuffing is with cream of mushroom soup milk and either pork chops or chicken breasts.

I'm really enjoying watching these ... I just remembered that I have some falafel mix in the cupboard and a couple of pitas. I think I may give your ranch dressing tip a try and have that for lunch tomorrow. Thanks for that! Good luck making it through February and empty that pantry cupboard!

You could use the stuffing as a pie crust for a Shepard's pie type meal. So make the stuffing as directed by box put stuffing on the bottom of pie plate and spread out like a crust, then the meat and veggies on top then finish it off with the mashed potatoes or maybe even squash if you like And cranberry sauce on the side.

Don't stress yourself about the amount of butter in a desert. It's a special treat. You're not eating it every day or anything.
I suspect the only reason it seemed so extreme was because the butter wasnt mixed into the batter. I doubt it had any more fat than a comparable slice of frosted cack.
I agree! I feel like butter is the better option and it's more important to eat it in moderation. I don't eat very much cake anyways :D
A family favorite here is an extremely simple, yet delicious mexican, rice casserole.
It's just a layer of rice on the bottom, a layer of browned ground beef, a half and half mixture of tomato soup and salsa poured over it all and a sprinkling of cheddar cheese on top. Then we put it in a 375° oven until the cheese is melted and slightly browned.
Sometimes we season the ground beef with a little taco or cajun seasoning but it's shockingly good either way.
Our grandkids have never wanted for anything (I hesitate to call them spoiled but... well, they ma be, just a little) yet this is one of their most requested dinners.

Vegan parmesanish…closest thing I can think of is nutritional yeast. You can spice it up with ground up cashew nuts+touch of garlic powder? X

Use the stuffing mix for homemade chicken strips,or cereal,rolled up by rolling pin for chicken or pork chops.

If you make green split pea soup, you can add 1/2 cup red lentils there too for extra fibre and protein. You won’t notice it at all.

It's such a great salad! I love carrot salads because I always have a LOT of carrots to use up! haha That recipe was quite good, I think that I posted the recipe in Week #4?
lentil/split pea may make a good vegetarian meatloaf. We actually use a box of stuffing when we make meatloaf or meatballs.

A few years back I made a yellow split pea curry soup with squash, onions, cauliflower and carrots. You could use pumpkin and whatever other vegetables you have. I just added a lot of curry powder to it and it was really good. I don't know where you stand with your curry powder but if you have any it's a good way to use it too.

Pita hack...heat up the pita in a pan until it poofs up like a balloon. This will make it easier to open for a sandwich. Traditionally we wrap the pita around the ingredients (think gyro) and don't stuff them.
The peach cobbler looked yummie. I have some frozen peaches that I got last year fresh in the clearance bin of my farm co-op store (50 pounds!!), and I'm down to the two big bags of them. I think cobbler is, surprisingly, the only thing I haven't made with them! 😄😄😄

I was going to do some baking but sometimes I just ate it with a spoon! Same problem I have with keeping Nutella in the house. Yum!
I mean…I ate almost the whole first container with a spoon…over a few months LOL It’s like having a chocolate bar on a spoon whenever you feel like it! Too tempting! 😂🍫🤷♀️
TIP: melt the butter in the dish in the oven you want the butter sizzling when the batter hits it, it won't stick then and makes a better bottom crust.

On the peach cobbler I make up about a tablespoon of sugar and butter and after the cobbler is cooked I put the mixture on top and broil it for a couple mins. Makes a hard sugar topping like the edges are. Also make the exact same thing with pineapple is awesome.

Stuffing mix you take cooked chicken and put at the bottom of a casserole dish top with cream of chicken soup, add frozen broccoli next and top with shredded cheddar cheese , then make up stuffing mix as packets say ‘s and place on top and bake till heated through on 350

A vegan cheese replacement is nutritional yeast. Use it like a cheese in the shaker can. I learned that from Three rivers homestead.

You're keeping me strong in the pantry challenge! I am going to break down a bit today and buy frozen shrimp for $4.99/lb USD because I will never see that price again. I'm also buying a cucumber, bell pepper and lettuce because I'm weak. LOL Seriously, low spend frugal February will continue for me! Hugs!

@@JessicaWanders no actually you can measure a pinch and it's exactly that it's pretty funny our home ec teacher who was like idk 80 in 1995 showed us and I asked my grandma and they were like yeah one pinch is a tsp 2 pinch is like two tsp and I was like what about tbsp and she was like when you get to the long spoons we use for ice tea that's the same size as a measuring spoon and I tried it and dang if she wasn't right I was told the pinch and tea spoon thing was like from days not everyone could afford even measuring spoons and cups and when told to eyeball measure and I'm not that advanced lol but that pinch and tea spoon thing was for people I guess eyeballing it or learning to or too broke for measuring spoons idk but that crap works so I guess old lady sheffler and grandma Mildred were right 😆but it also might be a Southern thing to idk...
To open the pita, put it in the microwave for a few seconds & then it will open up

Great week. I loved the KD casserole and it made me want to make KD instantly (it was 9:30am)! I thought when you were explaining everything you were using in the sloppy Joe's that you meant the couscous, beans and carrot salad were going in as ingredients. I thought HOW CLEVER, that will taste amazing. Lol. The lentils in the spaghetti sauce looked fantastic. I've been really interested in lentils ever since you mentioned Canada was top producer. Can you tell me what the difference is between the colours? Do they taste different? What are standard ways to use lentils? Looking forward to next week.
Now the edit I wanted to make. Squash pancakes!!! Use the whole wheat flour and the squash. Boom! Done! And if you really want to double up on some purging, throw in a tsp of your kale greens booster! 😍
Oh no! I checked the "Held Up" comments and it didn't get posted in there! Wouldn't that be an interesting casserole, especially with the carrots! Hmmm I can't say that it would be bad necessarily...lol
I wouldn't say that I'm a lentil expert but I do love them and I'm always looking for more ways to use them! I've even successfully grown them in the garden just for fun! The red split lentils cook much faster and turn into more of a mushy texture faster than brown or green (or even red whole) lentils. I like using the split red lentils in Dahls because it's fast and easy! I don't notice too much of a difference in the tastes of the different colours but the brown ones hold their shape much better so I like them as a replacement for ground beef in recipes! They do take a bit longer to cook though.

Hi! Sorry that I didn’t post one. I basically do a carrot raisin salad and then add one apple. I’ve seen it done with pineapple and it’s really good too! I just mix it up with whatever I have on hand! I’ve even added 1/4 cup of walnuts and it was pretty yummy!
Usually:
2-3 carrots, shredded
1 apple, diced
1/4 cup raisins
1/4 cup Mayonaisse (or more if needed)
1 TBSP vinegar or lemon juice
1/4 tsp salt (optional)
Mix it all up and refrigerate until cold 👍🏼😀 Enjoy!

Personal opinion here, but I think the instructions on mac and cheese make people overcook the pasta, particularly when it's going in the oven after.
