I love potatoes canned this way..I usually fix them(after pc them)..alittle bacon grease in a frying pan..a diced up onion with the chunk type PC canned potatoes...lord have mercy..delicious!! Now I want to do french fries!! Would you please do a video on your favorite soup that you PC ? I love meals in a jar. Thanks for all you do. ❤
I know that the Amish dry can potatoes. Can I ask how fragile they are when you open the jar to roast/fry them. Do you have to handle them gently when you want to crisp them up?
They warn us not to can with dairy products. I do not know the exact reason for that. However; you state that you use your own butter but many of us do not have our own homemade. What do you suggest in that case?

If the product will be cooked before consuming at 185 degrees for 5 or 10 minutes, botulism *toxin* is not a concern. Perhaps your comment should have said WHAT the danger is and WHAT the solution is. Other spoilage can be seen/smelled. Perhaps you didn't know? Perhaos you didn't know the difference between botulism *spores* and botulism *toxin*? By now you should know that 3-letter agencies are half-truth tellers at best, and you should always do some extra research. It's right in my pressure-canner manual!

I understand why you shouldn’t dry can by I don’t like canned potatoes. I’m so tempted to try. I use pickle crisp when I can french fries and it does improve the texture. If I couldn’t get fresh potatoes, I’d think they were great😊

I dehydrate a lot of the fruits and vegetables to store up then put them into vacuum seel bags so that I don't haft to put them into the freezer.

I dry canned some potatoes the other day. I haven't tried them yet but they sure do look delicious!!
