I think the idea is that death is so big, thats its basiquelly always there and you wouldn`t register its presence as a threat until the very moment it comes for you. Basiquelly imagine if the sun revealed itself as a swarm of giant monster and was coming to kill you.

In fairness to the Death creator, they're correct that it is NEARLY invincible. In theory, you could throw like 1000 shadows at it and eventually they'd land enough nat 20s to lower Death's strength to 0 and kill it.
I mean, its also not even immune to all damages. Just damage from non-magical attacks that arent adamantine and silvered. Get yourself a +3 silvered adamantine greatsword and you can hit it for resisted damage

And how their life looked like. You loose one trait but gain one of said clone (like, you loose medium armor profeciency but gain proficiency in ranged weapons or whatever). When they die, they have a bit of "what am I, who am I and how did I fuck up this time" moments and can turn out being a version of themselves if they had some minor or major changes in their life like gender, background in job, heritage, education opportunities ..
