Curly pepper literally chili but with wavy shape. For you I believe any similar kind of chili will do

I think the chili will be about 3/10 spicy. Avoid the super spicy chili because gochugaru is about the flavor and not just the 🔥 also the color of the chili will affect the color of the food, so red chili is good for that beautiful deep red kimchi
