BTW, canned beans often get a bad rap for sodium, but I can now easily find them with no salt added.That allows me to control the amount of salt in a dish.
In video says mushrooms in can taste blah! I've been buying No Salt mushrooms in can for years & taste fine! 1 brand looks & taste slightly better than other!!! 👎💩🤡. 🙏🇺🇸
Agreed plus rinsing them helps remove alot of that sodium as well.
I actually prefer canned green beans. I’m basic like that.
I usually prefer frozen green beans because I’m most likely to use them in soup or salads, but canned is the only way to go when used as a side on Thanksgiving. They just go better with potatoes and gravy.
I have taught myself , over the years to Rinse any canned vegetables 2x and then , shake in my smallest colander, never have noticed any change in flavor, I’ve done this to canned mushrooms , green & wax beans, peas, carrots, and today bean sprouts, no big deal flavor wise… also hearts of palm & canned corn . Same with the occasional use of canned potatoes…. I’m sure there’s more that I forgot 😂, but the idea is there , been doing the rinse thing for YEARS 🙂, but am also trending to the freezer type of vegi’s for convenience ! Great Read ! Thanks ! 🎉
I can't eat peas because of an ulcer but my parakeet loves them so I buy him one bag of frozen peas and a couple months I don't give it too much because it's Starkey and get sticky lol

I cook artichokes all the time. They are easy to clean and cook in boiling water in 25 minutes. They taste much better than canned or frozen. I use jarred artichokes on home made pizza.

I'm a frozen veggie kind of guy.
Frozen is basically fresh. Unless you want to roast or grill veggies, they're at peak freshness.
I agree completely about canned mushrooms not being very good, even though I find fresh mushrooms difficult to store. I feel as though they must be eaten very soon after purchase or they are done for.
As far as canned peas go, I actually love them, especially the baby peas. I may be in the minority about that, but oh well.
It depends entirely on what you want to do with the veggie: heat up in the microwave, or boil as part of another dish, or mash into a soup
You are 100% wrong about canned potatoes, green beans and early june peas, my 3 favorite canned vegetables! I blend the canned potatoes with unsweetened almond milk to make a super cheap and delicious potato soup! I also love the soft texture of canned cut green beans (and short cut green beans, but they are hard to find) and early June (small) green peas, which are a million times better than canned sweet peas, which are larger and not nearly as pleasant. I love small peas in every form of the pasta I eat! Also one good canned veggie (fruit?) you forgot is black olives, which they sell whole, sliced and diced. I prefer the later two. It’s so convenient on pizza.
When I make my soups and stews. I often use can. But I've also used frozen and fresh. I found all will work great. Haven't tried dehydrated yet but would definitely like to try. Guess I'll have to look into Mountain house or one of the others.,just hard to find.
Canned carrots are best to make gingered carrots.
BTW2, where I live, canned tomatoes are much better than what I can buy fresh.

I love canned food. It is called progress.
Repeated 'con': "grayish color" - I've never seen this in any canned foods. Sure they're not a 'fresh green/(insert proper color) color' so that cancels that out. But now why are those available... They sell... Why do they sell?!? Cost! Fresh - upwards of $3.00 whereas a can about $1.50 to $2.00. We all know or most of us know that "Fresh is best" but when upwards of %50 of American's can't buy fresh ALL the time, then what?!?
I think most of your list is backwards. Canned beans and tomatoes are fine. The rest you suggest canned are better fresh, and the ones you suggest fresh are good canned. Fresh artichokes aren't that difficult. Canned peas are much better than fresh. Green beans too. Canned mushrooms are ok, but fresh is best.
Spinach is best frozen.

Frozen green beans have to be the most disgusting Frozen vegetable that I have ever eaten. If I cannot get fresh, I will choose canned green beans or go without. Never frozen.

Canned green beans are probably if not definitely THE most revolting canned veggie on earth. They're brown, mushy and taste like metal dirt.
You get the wrong canned green beans then. Mine are green and reasonably hard.
