Monster Truck Championship is a bit like what you’re explaining. It’s much more realistic than Showdown and you start on small independent circuits and earn money to upgrade your truck and hire mechanics and such. It’s not a full simulator and it isn’t licensed (no grave digger or Bigfoot) but you may want to check it out.
