    Rachel I've never tried minestrone. You make it look so yummy, and I love the good tips on zucchini. I love zucchini. I can't wait to give this a try. I sure love the garlic too in everything. Fresh herbs, less salt in my diet. Love love love your shows and thank You so much!!

    Just made this - I never knew how aromatic theses mushrooms were - WOW what a difference they make in this soup. Can say the same for the Parmesan rind. THANK YOU!!!

    Man I've had a crush on Rachael Ray since the 90's.... Everytime I think I'm past such a feeling, I watch her and NOPE! still there... Irony is I don't even look for women with same qualities. Hrm maybe I should.

    I read someone's comment about her weight and that EVOO is contributing to her weight. She has a thryroid problem,people need to stop being judgemental on peoples weight.

    One ingredient I rarely see in ministrone soup but totally necessary to me is some Worcestershire sauce. ❤️

    I’m not much of a foody, but I’m curious if this is really classic minestrone? I always thought it was vegan based. Aka vegetable broth, no meat, no cheese, etc. Can someone fact check me?

      It honestly depends. It's one of those dishes that everyone's mom and grandma has their own way of making so there's no set recipe. It's really versatile because you can use whatever veggies or pasta you like and then choose if you want to include meat or cheese.

    This soup is not healthy by any means with all the calories in it. I’m sure it would taste good but heavy on the calories. It’s not a proper minestrone soup either !!!

    Her tip about the zucchini was really helpful. *Make sure you have all your vegetables prepped first!!!* (Onion and garlic should only be cut at time of cooking and never refrigerated for next day usage...bacteria.) I cut the carrots first, then celery and finally onion.🥲 Whenever I try to prep and cook at the same time, I have to stop cooking and prep, stop cooking and prep... it's so much easier to just pour in the prepped veggies and use the "down time" to get the rest of the ingredients ready (herb bundle [I use bay leaves too,] cheese rinds, beans cleaned or cooking, mushrooms blooming on the stove on low/medium heat or medium high heat take it off the burner and cover for a minute or two for plump mushrooms and I add tortellini into the soup at the end.) Tortellini can be made on the side to avoid overcooking them and then added to the soup when it's time to eat or dry tortellini can be added right into the soup letting the soups juices reconstitute the pasta.
    I add beef bone broth to this recipe and after I eat it I feel so good it makes me smile for no reason which isn't usual for me. I'm depressed and don't have the energy to fake my personality. If you need an extra boost of nutrition, I recommend the beef bone broth in addition to chicken/beef/vegetable stock/broth.

    Minestrone should be vegetarian. And hold the potatoes and mushrooms. OK, you can make a soup anyway you want and your soup looks good ............. but ...........it isn't minestrone.

    This isn't a classic recipe. Minestrone soup doesn't have meat in it classically.

    After seeing this female try to make pozole and was a horrible garbage Americanized chili I started questioning myself how accurate are all the other dishes she’s made. I need an authentic Italian mom reac to this
    Because I’ve never seen minestrone soup made this way.

    Potatoes in minestrone soup? No basil? Nutmeg? Yuck! No red wine, no pasta, no spinach, why not add some dehydrated corn too. This is such a fail. Turn in your apron. I expected so much better. Oh...and no italian green beans.

    Rachel, if you would just stop using oil you would lose about 30 lbs in around 6 months. You add 1000 calories to your dishes by "drizzling" EVOO!. That's one lb every 3 days! Try it Rachel and you will be doing the best possible thing for America's obesity problem. Please.
