Shannon’s Carrot Cake
2 cups all-purpose flour sifted, not packed
2 teaspoons baking soda *1 teaspoon salt
4 eggs
1 cup sugar
1 cup brown sugar dark or light * 3/4 cup butter unsalted, softened * 2 Tablespoons vanilla extract * 2 teaspoons cinnamon
1 teaspoon nutmeg
6-8 carrots enough to make 3 cups, grated
1 20 ounce can of crushed pineapple (drained)
1 1/4 cup pecans (chopped finely and toasted)
