@cafehailee, i scrub & save the peeled potato skins and then fry them and toss with spicy salt, garlic and pepper. Old Bay, Lawry's or homemade. roumalade is good with them too. or homemade ranch sour cream
Fun Tip: You are using the peeler improperly. A peeler was designed for long strokes, not short fast ones. Peeling with a peeler should be a fast process. When you do many smaller strokes like that, you're just wasting time. Whether it's potatoes, cucumbers or carrots... it should only takes about 10 strokes or so, not 50. EDIT: Also, try adding sautéed or roasted garlic directly into the mash (to my garlic lovers out there). Then again, that may be too much for some people. Me, I love garlic! Can never have too much.

Don't call yourself crazy, everyone does things differently. The parchment keeps the cutting board cleaner and free from bacteria and other germs.
