This is a nice alternative to the classic Italian "Melanzane alla Parmigiana". I will try. But not in winter. There are other vegetables in season

OMG, this is just a gorgeous recipe! Can't really get good eggplants in the NE USA right now, but I am filing this away for next summer. I would never have imagined a cream-sauced eggplant dish. And as always, Albert respects his ingredients -- he highlights the natural flavors of the eggplant, onion/garlicky cream sauce and Manchego, and again shares his technique of salting/draining the eggplant to preserve its texture after cooking. Love this!

This is a potentially delicious recipe for ‘Aubergine (eggplant) a la bechamel’. I made it last night, following the instructions to the letter and I’d like to share my observations:
- Very important. Rinse the salt from the eggplant slices (as it is done in many other recipes) and pat dry, otherwise you’ll end up with a very salty dish.
-The 1/3 c. of oil won’t suffice to fry all the slices in what is known here in the USA as a large skillet (12-in.); the one in the video is considered average or medium size, but I followed the recipe from the page (not the video) and used a large skillet.
I shook each eggplant slice to get rid of the excess flour, but each batch soaked all the oil in the pan, having to add some more between batches. I had two medium sized eggplants (not large) and cut them using a ruler for the correct thickness; I ended up with enough slices (big and small) to cover the bottom of a non-stick, vertical sided 12-in skillet three times.
The result looked perfect, with a light crust of melted Manchego cheese, but it tasted way too salty for most people’s palate and health. After giving it a couple tries, hours apart, in the hope that the saltiness somehow blended in with the other flavours or subsided, I had to toss the casserole in the garbage. Too upsetting because of the great ingredients, the time, effort and electricity wasted, but I know that next time I try I’ll end up with a very tasty and enjoyable dish, like all the others I’ve cooked from Albert’s page.
Sorry to hear that, maybe you added to much salt to the eggplant, I just season them like I would season any other vegetable, so need to rinse out the salt, but yes, if you add too much, it´s a good idea to remove some of the salt, thanks for the comment and feedback :) Much love

I'm trying this tonight. Need to get the milk and the proper cheese. And, not to forget the spanish cava. I'm going to add just a soupcon of dry spanish sherry to the white sauce, and i mean just a soupcon. It can't overpower it, but be a harmony note.

The eggplant looked lovely just lightly floured and fried which is how my mum always made it. Never tried it with the creamy sauce.
Can mozzarella cheese be used instead ?
Mozzarella will melt just fine and make for a great presentation. It doesn't have as much flavor though.

When I tried salting my eggplant in the beginning, it ended up being way to salty for me. Maybe I overdid the salt.
You only need to add enough salt to season the eggplant, if you add to much you can wipe it off when you pat them dry :) Much love
