  • Hey! Today we will cooks coffee buns - papparoti.
    Ingredients:
    200 g of flour.
    30 g of sugar.
    100 ml of milk.
    25 g of butter.
    1 egg.
    4 g of yeast.
    2 g of salt.
    First, break 1 egg into a bowl and mix it well.
    Mix warm milk, sugar, salts and yeast in a bowl.
    Pour in half of our egg and mix again.
    Sift flour, mix dough with a spatula.
    Now add room temperature butter and mix it into dough.
    I knead dough for about 15 min.
    Cover dough with film and put it in a warm place for 1-1.5 hours.
    It is best if the temperature is about 36-38°C (98-100°F) (I set it near heater).
    For topping we need:
    30 g of sugar.
    Remaining egg.
    40 g of flour.
    3 g of coffee.
    30 g of room temperature butter.
    First, brew coffee - 7-8 g of boiling water for 3g of instant coffee.
    Set aside to cool while we get back to dough!
    Divide dough into 6 parts.
    Roll out dough with your hands, put a small piece of butter inside and form a ball.
    Cover our buns with film and leave for 30 min.
    Mix butter, sugar and a pinch of salt.
    Pour in remaining egg and mix again.
    Now it's time for coffee. Don't forget to let it cool down!
    Add flour and mix well.
    Put our coffee cream into a piping bag.
    Cover about 2/3 of the bun with topping.
    Bake in top-bottom mode for 18-20 min at 180°C (350°F).
    Ready!
