I was a breakfast cook for a couple of years. And cracking an egg like so much in cooking is just practice. I preferred using the lip of a pan, solid whack and boom one handed you've cracked an egg. I weep for the future.
Egg cracking, much like making rice, is surprisingly easy to fuck up but also really simple. Using a flat surface, it should only take one tap, harder than you think but still light enough not to just splatter the damn thing. It really is just trial and error and feeling it out, but once you get it a few times you'll be set.
