    I got that feeling in my stomach hearing these stories... same feeling I get to this day whenever I hear a ticket machine... and I have not cooked in a professional kitchen since 2011. You are a survivor...anyone who stays in this industry, especially now, is a survivor and a total warrior.

    very beautiful lesson from 11:52 - 12:43. honestly redemptive to hear. if you're trying to understand your superiors mindset in the kitchen, or have recently been promoted to this kind of position, this speaks volumes. well said, justin.

    Here is a good one, on my first day at the Broadmoor I was putting a speedrack full of bacon for brunch service on Sunday away in the walk in cooler. The main kitchen was built in 1905 and they had to modify it for the coolers which mean you had to push the rack of bacon up a little ramp to get it into the cooler. Long story short instead of asking for help as it weighed a ton with all the sheet trays full of yummy bacon I tried to do it myself. Needless to say as soon as the executive chef of the whole property walks into the kitchen the rack tilts over and all the bacon ends up on the floor. yep I'll never live that one down.

    discord would be great.. i am moving to nyc in two weeks to take my culinary career to the next level, ive been working in a fine dining restaurant here in downtown detroit, but i feel like nyc would be a better choice to excel, your videos help immensly!!

    I have just recently found your videos and i think theyre great! I'm 18 and graduated this past year, I have had a love and passion for food my whole life and learned to cook when my mom was at work as a kid. I'm currently struggling with whether or not to go to culinary school, my family doesnt have much money to pay for school and im deathly afraid of student debt. Also I've never been huge on fine dining, my dreams are honestly just to open a mom and pop shop somewhere with nice people. do you believe its possible to gain the knowledge i want working in restaurants?

    Justin it has been 25 years ago since coming out of JWU in Charleston SC,. How do you get over a Drunken Master Pastry Chef throws your tortes in the trash and says " villiams that was a B+, but not a good enough to send to the dining room! ". We paid the same amount as culinary arts students and two. My body temp is higher than the average person. So the covature did not pipe smoothly . We could not add anything to it to make it pipe able.

      I was in boulder! And I went to Denver a few times! I wish I was able to experience Denver a bit more! I went to black belly to eat and basta! I never ended up staging anywhere to be honest I just wanted to experience Colorado maybe next time I’m out there I will!

    The way I know I work well at a place is when they don't fire me for dumb stuff I do . I made some whip cream and put it in a plastic bag then I came up with. Great idea ...seal the bag in the vacuum chamber with the bag sealer . when I turned on the machine it started to suck the whip cream out of the bag and got all over the inside of the chamber . right before 5 pm .

      I have a whole mini blog post I wrote as part of my newsletter where I shared the lessons I took away from that experience: support.justinkhanna.com/posts/learning-from-mistakes-knife-buying-guide-and-a-surprise-throwback - I think there's a fine line between abuse and "a learning moment" which is dependent on the amount of shame and embarrassment...maybe that's not nuanced enough. But I certainly fell in the latter camp, where I just thought I royally screwed up and had some slight embarrassment in the moment, which quickly went away once the problem was fixed. One of those "alright, well I'll never do that again" lessons - make sense?

    I thought he was being dramatic when he said his horror stories brought PTSD. After hearing the fish story, I would have wanted to crawl under a rock. The mushroom story wasn't that bad tho because it was the process being stupid, more than anything.
