Best Saison Yeast? Dupont vs Belle Saison (plus Voss)

  • Can a dry yeast match up to the king of Saison yeasts? I brew a 3-gallon batch of a simple Saison recipe to test out Dupont (WLP565) vs Lallemand Belle Saison. I also include a batch fermented with Omega Voss to get a better understanding of that yeast's character.

    Brewed 3 gallons of dark saison today. I used Voss Kveik. I'm experimenting using a sous vide machine holding the fermentation at 95 degrees. I have the carboy sitting in a water bath in a tote utilizing the sous vide machine to hold the temp.. We will see

    Great test and video! To get the orange caracter from Voss you have to underpitch to stress it and start the ferment hot 35-38degC and let it naturally cool. Yeah, it´s a strange animal 😄 I use it all the time for most of my brews, and if I want it to just ferment clean, it will do that with normal pitch and 23-25degC. Belle Saison FG@1,001 wow! David Heath coferments Belle Saison/Voss 50/50, I never tried this approach, but might in the future. A Saison is on my must brew list for the spring. Keep on brewing!

      I have not pushed Voss that warm but I have made some wonderful hoppy IPAs and Pale Ales fermenting in the 30C range.

    I did a split batch experiment with WL 565 and Wyeast 3724 (both are Dupont strains) and put it them both on tap for a homebrew club meeting and everyone liked the Wyeast version more. In the next few months I plan on doing the experiment again with the Omega and Imperial Dupont strains.

      Nice! Do you recall any differences between the two strains? I know on a page by Drew Beechum he recommends to mix the two. I have had quite different results using the White Labs and Wyeast versions of the "Westmalle" strain (WLP530 vs WY3787). I got more character out of WLP530. I have never used Imperial yeast before (limited availability at my local shops), but I made a very nice beer with Omega Saisonstein. Let me know how the Omega and Imperial trial turns out.

      @@CascadesHomebrew This was in 2008 so I can't remember specifics. I just remember that I and everyone else liked the Wyeast 3724 beer more than the WL 565. The only variable was the yeast as they were from the same mash and ferment side by side. If I had to guess the Wyeast was probably had more character.

    Looks like your boil kettle could do with adding a tap to make transferring to the FV a but easier. might be an interesting how-to video for future 😉

      Yeah, maybe I should look closer at adding a ball valve to this kettle and my 10-gallon kettle.

    Did a simple recipe split batch with Voss kveik and Duvel (wy1388) yeast. The one with the kweik tasted very "empty".

      Interesting. I have not 100% figured out where Voss or other Kveik beers fit into my brewing. I have made some really nice hoppy beers with Voss, but I am not sure if Voss (or a strain like Lutra) is a good fit for other styles. As I recall, the Voss version here just tasted plain with a touch of that Voss orange character.

      @@CascadesHomebrew I think you can use Voss everywhere you use US-05 or something similar. A neutral yeast. Maybe a bit faster 😁

    Now I see why you were referring to Dupont as WLP565 is my favorite Saison yeast but Lallemand Belle Saison is probably my least favorite so this comparison would have been very bias for me. I've used Belle Saison a 3 or 4 times in 1 gallon batches and never cared for it but I've used 565 over a dozen times now (probably a lot more if I double checked all the brews I've done). 565 is my go to for Saisons without hesitation.

      I am planning a Saison this weekend with WLP565. Saisons can be such refreshing beers to drink with lots of flavor and they are dirt cheap to brew.

      @@CascadesHomebrew I love using the 565 with some real fruit as the spicy part really compliments fruit additions in the Saison. (I keep the fruit a bit low to allow it to show through but not over power the Saison...aka balanced.)
