How to Make Keto/Low-Carb Fudge

- You know when you want that rich and sweet piece of fudge, but your low carb diet wouldn't permit it? Yeah - this keto/low-carb fudge will hit the spot and make you jump for joy!

INGREDIENTS:
1 cup heavy cream
2 tbsp unsalted butter
1 tbsp vanilla extract
1/3 cup erythitrol
1 cup sugar free chocolate chips or bars (such as Lily's)
splash of whiskey (optional)
walnuts or pecans (optional)
flaky sea salt (optional)
DIRECTIONS
1. Set a pan to medium-low heat. Add your heavy cream, butter, vanilla, and sugar. Once the sugar has dissolved, add a splash of whiskey if you choose to.
2. Stir for 15 minutes or until the mixture turns a golden brown and the sauce thickens (it will thicken more as it cools).
3. Remove from heat. Add your chocolate chips and continually stir until they melt and evenly combine (don't worry - they will melt with the residual heat). Let cool for about 10 minutes.
4. In the meantime, line a small dish with parchment paper on all sides, with enough overhang that you will be able to use it to lift the fudge out from the container. You can get fancy with the geometry and the folding, but it's not necessary.
5. Pour the mixture in and spread out evenly.
6. Optional: top with your nuts of choice and the flaky sea salt.
7. Place into the refrigerator for at least 2 hours.
8. Remove from the fridge. Using the parchment paper, lift the fudge from the container.
9. Cut the fudge into smaller serving size pieces and enjoy!
TIP: if you let the fudge warm up a bit, they will be creamier and smoother!

There are a lot of creative low carb things that can quench that sweet tooth. This is def one them!

Allergic to nuts?? Now, that's gotta suck. This fudge fits 'the bill'' and for real, looks great. It reminds me of the fudge we'd buy at the Scotch Bonnet in NC's OBX. After sampling every kind of fudge in the shop and buying 4 lbs. of it, only thing left to do was eat loads of oysters, drink beer and then pass out on the beach. LOL! Life is good, right. Our refrigerator has not been without fudge since discovering this channel and this recipe. Great job! I finally got the recommended salt and added it on the last batch. My wife thought it was fantastic, as did I. I used the sweetened condensed milk from the first part of the recipe (with a few changes) to make caramel and then made some turtle pecan candies, and now this is what I'll be doing again today, because they were that good. One of my favorite UA-cam chefs!!

It most definitely added a sort of depth and richness, almost chocolate truffle like! Have you ever made one with white chocolate chips?
Have not! I shy away from white chocolate since they tend to be super high in sugar, havent seen any low carb versions (yet)
Erythitrol has recently been linked to heart attacks, perhaps Allulose would be a better alternative.
This is definitely on my list!

I've come up with another recipe in which I use this fudge. I make one batch and put it in a 9x9 pan and coolit. Then I add a peanut butter flour mixture I cam across on the "All Day I Dream About Food" channel and lay that down atop the cooled first batch of fudge. Back into the refrigerator this goes, while I make a second batch of fudge. Once this is complete, I pull the pan out of the fridge and apply batch two to the top of the 9x9 pan. Then I add a few crushed walnuts to the top and back in the fridge for a hour. The makes thick bars, which I cut into somewhat small squares. I find them to be delicious.
Its like a peanut butter brownie sandwich!
I’m pretty thrilled we use the same vanilla!
First time tried this with allulose as the sweetener as its hard to get where I live. As heard its closest to sugar as it caramelises when heated and doesn't crystalise. Makes it like real fudgey little chewy even if leave it in freezer.
Yup - and allulose lowers the freezing point of things, so it wont get rock hard (which is why its such a key ingredient in my ice cream recipe!)
@@BlackTieKitchen yeh, would like to try ice cream next but need an ice cream maker as want to do it properly. But wondering if use allulose only would it make it chewy which don't really want for ice-cream. Maybe go half half with erythritol, have ya tried both versions.?

I would recommend the powdered version for anything that's baked. You can take regular erythitrol and add it to a blender to make the ultra fine dust. Better yet, I recommend allulose now - it dissolves much better and doesnt recrystallize like erythitrol does!

Thats going to be tough because the cocoa powder doesnt have any of the added sugar or fat. Might be able to substitute in coconut oil and butter, but you will need to add more sweetener as well. Can probably figure out the math, but I dont have pen and paper on me 😂

@@BlackTieKitchen tbh, I forgot fudge existed 🤦🏻♀️😅until I wanted to make flan and began getting ingredients to make the sweetened condensed milk and then I was like, "wait, didn't I do something like this for fudge?" So I scrapped my flan plan and did this fudge recipe last night instead.😄 Turned out tasty! I plan to use walnuts to top it next time though.
Haha! Ive been experimenting with flan - making low carb condensed milk seems like it isnt really necessary, but I havent tested enough!

Great having the different sweeteners! I'm trying to work on a Cream Cheese Pie with Blueberry Sauce but for keto/diabetics...really wanting it to be just as delicious as the one I make with raw, organic sugar! (The difference in taste between raw organic sugar vs. Processed...big!)...
Ive mostly switched to using Allulose for almost everything. Boca sweet seems to work decently well in my testing, but it hasnt been extensive

Cut one strip of parchment paper the exact width of the base of your pan with 4 extra inches in length. Cut a second the exact length of the pan with 4 extra inches in length. Cross hatch and lay in the pan. No crimped, misshapen corners!

I made this ( I used Lilly's semisweet chips) and it was delicious. I tried making it with the vanilla chips with macadamia nuts, which didn't get as firm, but still delicious. My question would this recipe work, if instead of chocolate chips, you added peanut butter? Would love to see you make a peanut butter fudge! ❤️
It should work with added peanut butter! Might have to add some cocoa chunks to make the fudge not be gooey tho
Thank you for sharing. I only have the Bake Believe semi sweet chocolate chips, or the dark chocolate chips. So I wasn’t sure if it would work. I think the dark ones would be a little too bitter. But it’s good to know that the semi sweet worked fine. I saw a different recipe where they wanted you to use milk chocolate but I think those are harder to find at least at my Walmart right now.
You can use foil to line the dish, also. Much easier!!

Experimented with another sweetener this time xylitol as heard like sugar also and actually has known tooth benefits oddly for real too. Think i put too much in tho only 70g but was too sweet for me. I make about 16 pieces with about 100g of 90% choc as its best for cost worth. Its little fudgey straight out freezer not as much as allulose but more than erythritol for sure.

Very good! I put salt, walnuts and coconut on top, in thirds. Walnuts and coconut were great. I used Bochasweet for the sweetener. Mine did not separate from the parchment easily and it’s still kind of soft days later. Definitely not the same consistency as yours. Is this because I used Bochasweet?
Most likely! Have you put it in the fridge or left it out? Its not a very hard fudge and if left out at room temp, it definitely gets soft

I checked on “All Day I Dream About Food” because Carolyn uses Bochasweet a lot and she pretty much explained in her recipe that if you use just Bochasweet for fudge, it will be too soft. She recommends Swerve and only a couple tablespoons of Bochasweet. Oh well, I learned. Next time I’ll do it right. Still tastes good though!!! Thanks, Dennis.

It doesnt matter! I recommend you buy the regular kind and if you need confectioners - just run it through the blender. Normal confectioner's sugar has some corn starch added, but Swerve is just a finer grain since it's low carb

Dennis, would you see allulose as a substitute for erithytol? Have allulose on the house right now and erithytol is in short supply and don't really want to go out
Id go allulose! Ive pretty much migrated to using allulose for most everything and it works as a good 1:1. It's slightly less sweet, so you can add a bit more of it when substituting if youd like

@@BlackTieKitchen so bad news, I followed the directions, and while I wouldn't think to blame you; any ideas as to why after three+ hours it was still as pliable as a caramel. No stiffening or hardening at all. Taste was delicious just wrong consistency to call it fudge
