I have had experience with the infinity barrels(what I call)you can expect the 1ltr barrel to simulate a year of aging about every 8 weeks, 10 weeks on 2 ltr, 12 weeks on 3 ltr, 15 weeks on 5 ltr, 18 weeks on 10 ltr, 23 weeks on 20 ltr. 200 ltr, 1 yr. of course. I have also find that the 3 ltr. seems to be the best for what I've found when it comes to a more smaller personal size. They also all need to be recharred with a hand torch after about 5 to 8 aging periods(depending on aging times)by taking the bands off 1 side at a time. And the unvarnished barrels work best, keep barrel wax, extra bungs, painters tape, corks and spigots handy. And wax around the bung after filling and bung where the spigot is now(it's you most vulnerable spot) to the angels share. If you don't want to lose more E.H.T. then you have too. Tasting after 3 weeks is futile. You won't tell. If you are not tasting any difference from 3 to 12 weeks hence the recharring process. I would have started with a Benchmark, J.W. Dant, Ancient Age, Rebel, Fighting Cock, or an inexpensive BIB. One of my best was a Mix of Dickel White#1 & Jack Daniels Bonded Rye in a 2Ltr Barrel for 14 Months. Making it about a C52/R38/B10 8+yr. Aged Mashbill. I have found out that the better bourbons are good just the way they are. If you can get a wine, port, sherry, pinot, rum or even a cognac barrel for a finishing then it can be interesting. Good Luck at your infinity journey. Cheers🥃
