- Rajma Masala is a staple Kidney beans curry for North Indians. It is a favourite dish available across road side eateries when you travel on highways of North India and is best relished with steaming hot Basmati Rice.
Certainly the most underrated cooking channel on youtube!!!! I'm today able to cook good only because of this guy's recipies.
Satish SS thanks Satish but we will be there as we are the most recognized face on tv
@@chefharpalsingh Definitely Paaji, Aap ne jitna style se aur pyar se recipies banayi hai, usse toh bacha bacha bhi acha khana banana seekh le. Your style of cooking is reallyhelpful especially for bachelors learning to cook.
EDIT: I meant underrated because you deserve more than millions of views on youtube...You definitely are well recogonized!!

Thanks for liking
Sir, ye recipe itni perfect hai ki mein kya bataon! Being a south indian I could finally make the best rajma masala. Thanks a lot Harpal ji!
Thank you so much
Harpal Singh ji, thank you 🙏🏼 for this delicious healthy recipe. I used Instant Pot to cook the rajma/ kidney beans and used the same pot to sauté other ingredients and make the rajma. It took about 1/2 hour to make it and then I put it in slow cook mode for 2 hours. It was unbelievably delicious. We had roti, rice, Karela aloo sabji and raita for lunch.
I used mustard oil for this recipe. I made a large quantity, hence I am freezing leftovers in small containers as my daughter likes to take it to her home when she visits us. Rajma freezes well without much change in texture and taste. Thank you ji 🙏🏼🙏🏼
Oh Wow Sandhya jee just reading your comment has made me feel hungry..
Now a days, Everybody wants everything instantly. But u always teach us to give time for each ingredient to cook well, have patience, love the food.. Not many Chef explain as u do..!!
Thank you so much
Chef you are my absolute favorite! You have no idea how much your recipes have helped me in my college years , when I was in the UK. All my friends would come to mine for food, and treated me like a princess in return, haha! Thank you for giving us this!!
That is awesome!
Hello chef and all ! Made this recipe today and it make out and tasted delicious.
Some important tips which i have learnt in this recipe and have listed below the same. Hope its useful.
1. Rajma and anyother lentil recipe should always be cooked in Ghee.
2. When u have soaked the rajma overnight and pressure cook it the next day, DONOT pressure cook it for more than 2 whistles. If you do cook for more than 2-3 whistles as i did, then u will find 25-30% of rajma being mashed and soggy.
Hope the above information helps you.
Thanks again chef !
vishal chand jain thanks for the tips, when Rajma is little over boil and some mash the consistency of the gravy becomes good
@@chefharpalsingh thanks chef again. The rajma was BLOODY DELICIOUS. THANKS A LOT FOR VENTURING INDIAN FOOD TO AN INTERNTIONAL LVL.
This channel brings authentic punjabi dishes to my home.. Loving it

The way the Chef has demonstrated and indulged people watching it was a class apart. Another interesting fact is that he explains each and every aspect of the ingredients, the curry goes into making. Thanks. Looking forward for more such indulgence.

So my conclusion is correct mainly oil sepration is related with moisture loss or evaporation?

@@chefharpalsingh great. Many thanks. Punjabi khana is superb. Powerful food, Veer ji.
Harpal , you are the best. You rock. God bless
Manash jee thank you so much for following
Harpal ji ,cooking till oil separates or oil should be oozing out of the mixture essentially means the moisture has evaporated. Generally if I am making bhuna masala if I have added very less oil there is no oozing of oil. Some oil can be seen at the base of the pan . Pleas let me know if my conclusion is correct. Oozing of oil is related to evaporation of moisture.
Oil basically helps in reducing the mixture and then if it floats on top of a dish it helps in protecting as a preservative. First amalgamation and then separation
Good afternoon sir 🙏

Hi chef, I really all your recipes and I've tried a few and they turned out amazing. .. Thank you soo much for sharing your talent with us.... just one question though,
I DON'T HAVE BLACK CARDOMON I'VE NOT BEEN ABLE TO FIND IT IN STORES HERE IN KUWAIT, CAN YOU PLEASE SUGGEST WHAT CAN I REPLACE IT WITH AND YET MAKE IT TASTE AWESOME LIKE YOURS?????
BTW just want to say, "God bless the work of your hands."
Thank you, Merilynn for appreciating my recipes and as a substitute of Black Cardamom you can use Green Cardamom or the powder of Cardamom.
@@chefharpalsingh thank you soo much for the reply
Harpal sahib, it would be very helpful if you could provide both the 'ingredient list', and the 'cooking instructions' in text form below the clip...that would enable viewers to cut-and-paste as opposed to literally typing them out.
Ok next time
I prepared it yesterday came out well and very tasty
Yummy😋 can I add soda bcoz adding only salt didn't really help me
Thank yo u

Is tomato puree same like ketchup ? Can we use the ketchup
I always face following two issues when preparing this dish. 1) the rajma after boiling as advised, never give me desired consistency as shown and I have too much water remaining in cooker post the boil. Hence after gravy, I put it all in kadhai. 2) I also use lit of oil for starting this gravy but its always getting soaked in onions. I never get liquid oil ... It's always dry after putting and sauteing onions. Then I put the ginger garlic paste.. Yet it's dry. Then I put puree and it's start throwing away water everywhere... So I have to do it half covered..
Please assist.
Ok one way is take out about 20 % rajma and mash it so u get desired consistency, second a little more ghee or oil makes it better
@@chefharpalsingh Ok. Thank you. Ambadnya. Naathsamvidh. Hari Om.
@@chefharpalsingh it did turn out the best dish. My parents just loved it.
