Weekend is one thing!
But during the week there are people who have to work (hard)!
Since I do keto, I eat omelets. I basically cook the eggs sunny side up season the eggs have them cook, then put the proteins inside (bacon, sausage, avacado), and some cheese; fold it in half for about 30 seconds and then flip it to the other side. No! I do not have the yokes dry. That’s the best part!
Everyone who tries them tells me I make the best scrambled eggs they've ever eaten:
1. Whip the eggs together in a bowl, adding whatever you want for flavor like a dash of pepper, garlic, onion, or whatever.
2. Melt 1 tablespoon of butter for every three eggs you are cooking in your pan. A wok-shaped bottom works best, imho.
3. When the butter has JUST melted, not bubbling or burning, pour the eggs in and immediately fold the egg and butter together until they create a nice emulsion using a spatula. Don't be shy about it.
4. Cook over MEDIUM heat, continually scraping the sides and bottom until the eggs firm up. DO NOT let the eggs sit over the heat without scraping and mixing or they will get inconsistent heating and you'll get nasty dry parts. NEVER stop scraping. It's extra work, but the results will be worth it.
5. When the eggs are still very moist, and there is now some steam rising from them, this means the eggs are just about finished since the temperature has risen enough. Once there are no excess droplets of water on the bottom, shut off the heat before they dry out, and scrap them quickly into a non-heated container for serving.
6. Serve immediately. The eggs should be super moist, not dry in any way, and should be almost like egg custard.
Dry scramble eggs are a violation of all that is good in the world. If you have to add anything to them to bring back lost moisture, then you did something wrong. This means nearly all scrambled eggs you might get in a restaurant or fast food joint are hideous perversions of the real thing.
Like Bill said, beat the shit out of the eggs. I put both lemon juice and hot sauce in them before beating them. I do use butter because it is not only the tastiest, it is actually the healthiest(despite what they tried to tell us all those years). just as the butter starts to brown but before it burns, dump in the eggs, take them off when halfway done, as he said. Finish with fresh cracked black pepper and some sea salt(if your butter was unsalted, otherwise they have enough salt already). Yes, I am a white dude, not all of us are afraid to season our food, we aren't all British. Actually, despite all the other stereotypes, many southern white men and women love spicy food. We share that love with both our black and Hispanic neighbors.

Gordon Ramsay has the best method. LOW HEAT is the best way. The griddles at the restaurant are set at different temps. I can make them as good as anyone on the planet ...... I will gladly take on any comers from anywhere. Butter and medium to low heat is the best. Dry eggs are the product of high heat. The pepper is after the cooking on top. Bill Burr only knows how to bake. Gordon knows how to cook anything and has over 50 places and Bill has maybe 3 things going on .....

As for the 24 hour breakfast thing? After 11am, I don't care about breakfast anymore, I am now in lunch mode. Ultimately, I agree with Bill. If you couldn't make it to Mickee D's by 10:30am. Have a burger and STFU. As for Taco Bell... NEVER! 🤘🤘🤘

mojo, i'll try it, i usually put butter and constantly whip ? stir? something with a rubber spatula thing in the pan so i am constantly moving the eggs and hovering the pan over the flame without letting it touch until i get some sort of creamy egg substance, i might have to try the method he described.

If you cook the meat right, you don't need seasoning, sweetheart! Also, sea salt is a seasoning in case you overcook your shit

My favorite scrambled eggs is cook applewood bacon in a pan first then take that out and scramble the eggs with milk and salt and pepper and then cook it in the bacon grease _ rip up pieces of Swiss cheese and then add the bacon to the eggs ripped up_ it's good

no one ever seems to metion that you leave the eggs in the pan till the bottom turns slightly brown. that changes the flavor.....in a good way. well yo can disagree but you should do yourself a favour and try it at least once 😎🤘

Scrambled eggs should be light and fluffy (soft scrambled)... Not dried-out fucking bits! Get the pan hot then shut it off before you scramble.
