I recommend using a normal sim for your main number and an eSim for roaming. Your main carrier understands physical sims and only few understand or support eSims. For roaming always use an online source without contract so you can switch around depending on where you are roaming.
I think it’s the other way around IMO eSim is best for your main carrier while a normal sim is best for roaming as local carriers from tourist destinations would have more affordable data plans and a big chance would be in a SIM card.

I have a Samsung S21+ and the update to Android 12 operating system came out last week which does support eSIM.

That's wrong, you can have multiple esims, with only 1 active, that you can switch about. Travelling wise, it's far easier than swapping sim cards.
