They were speaking Korean. I sometimes hear Japanese in the second half, but I don't know if it's really Japanese people. Koreans run Japanese restaurants all over the world.
All cooking method is Japanese traditional method. But they speak Korean. probably Japanese noodle shop in USA or in Korea. But they studied Japanese cooking as well. And ingredient is correct like using katsuobushi-dried bonito, and dried young fish and kelp.
When I see food not being touched directly with hands, specially after it is cooked, I know the quality must be amazing. Because that's how much they care about the quality and about their customers! I wish I had a foodie partner to visit Japan!

just a quick question, I know that the noodles were in plastic but why the need of stepping on it when you have a machine to flatten it?
Done to align the gluten in the noodle. Seems weird, but it makes the noodle more chewy and as a result, better for ramen.
But why use a foot instead of a machine is what he is asking...
