Most comedy anime are actually a different genre that also has some funnys in them, so they slap the comedy tag on it. Most purely comedy shows just stay as manga or have a more lowkey slice of life approach to comedy. It's rare for shows like saiki k to get animated for some reason.
Saiki K and Wang Ling (The Daily Life of the Immortal King) both have the most ridiculous worlds but both manage to be the most powerful anime/donghua characters in media
There's a reason why Saiki K is my 3rd all time favorite anime and top most rewatched anime. It's comedy gold. Btw, if you haven't seen it already, I recommend watching Gintama. It contains a lot of humor probably more suited for adults but so much of it is just pure nonsensical madness and has a lot of running gags. There are episodes that will leave you wheezing, some of my favorites are the virtual reality one and the neo Armstrong cyclone jet Armstrong cannon one. It isn't all comedy though so beware of that if you decide to get into it, because there are some serious arcs and scenes + in the last few arcs it shifts to nearly pure seriousness. But even those can be worth watching. I've seen people say the first few episodes are boring, which I disagree with, but it gets much better later.
