@@EducatedWalrus It's really a matter of preference, but **traditionally** it's made with ricotta or a bechamel sauce. The addition of one of these just makes for a richer taste. As far as cheese, I will usually mix it up, but generally fresh mozzarella, maybe provolone, and some fresh grated asiago & parmigianno. I like his addition of gruyere, it's very melty.
