OMGee Good Cashew Cheese Spread

  • You have got to make this OMGee cheese spread when you're in the mood for fancy food. It's a super simple recipe, doesn't call for much in the way of ingredients, but it does take a smidgen of forethought. Oh and cool dark place for the cashew cheese to ferment for 24 to 48 hours.
    This is only the beginning for me. You will see more of this recipe in your future as I learn more and more I play around with it.
    The basic recipe: 2 cups natural cashews, 1 cup water, 1 tsp salt, 1 probiotic capsule.
    Blend nuts, water and salt until smooth. Stir in powder from probiotic capsule. Transfer to strainer lined with cheesecloth. Nest the strainer in a bowl. Store in a cool dark place for 24-48 hours, depending on the amount of tang you like in your cheese. Remove from cheesecloth and transfer to sealed container. Chill then serve, or use in recipes.

      Right... all the love people ha e showered Jill with yet she wdon't give hoot about the people that care about her... a year later. And -0-.... pretty sad... all she wanted was Fame....when that didn't happen everyone got dropped like a hot rocks... 😥... we should be Mad about it. But i.think people like that are really to be pittied...

    My husband and I just stumbled on to the FOK and What the Health documentaries and decided to give the vegan lifestyle a try. I came across a video of yours that someone shared in a recipe group and I ended up spending half my day watching your videos. Thank you so much for sharing what you do, I have enjoyed every single one and I can't wait to make your recipes. I have 3 boys that are part of this transition and I think they are really going to enjoy some of these dishes! You have a great personality and make this change not only seem attainable but also FUN!

    Great recipe! When I need a fermented (probiotic or rejuvelac) cashew or almond cheese somewhat fast, I put it in a glass bowl on a rack in the instant pot and use the yogurt function overnight or for 10-12 hours. The low heat dries it out a little and it is nice and tangy. Yum!

    I made this same basic recipe from a different blog. After the fermenting I added one quarter teaspoon of liquid smoke and chives to the cheese. Crazy good. This is sure to be a staple in my house. So many flavorful additions to try.

    Fun recipe! I love to ferment foods, so I always use the liquid from one of my ferments to make cashew cheese and come out with all kinds of cool flavors! They always say to use rejuvelac if you aren't using a capsule, but I love using the "juice" from fermented red peppers or half sour dills, even sauerkraut! Last time I made kraut using red cabbage, so my cheeze was a lovely (but odd) pink! LOL! Fun stuff!

    I just started making my own cheeses last year (thank you Miyako Schinner.) If you don't want a slicable cheese, skip the cheese cloth & just let the cheese ferment in a shallow container covered with a cloth instead of a lid. Different probiotics result in different flavors. Play with them & the amount of fermentation time. Love your vids. Keep 'email coming.

      Also, try pine nuts or sunflowers or my favorite - coconut meat from a young coconut :::swooning::: Same process but different protein/fat flavor profiles.

      Simple Daily Recipes Well, I haven't tried many but the ones I use for my health work great. They are by the company Raw. They are very active enzymes. I also find that if you switch up the acid you use (many recipes call for lemon juice but I prefer grapefruit jc or apple cider vinegar) you get very different flavors. Grapefruit jc tastes more cheesy. I love all the chemistry.

    I made this as cashew cheese from another recipe, added big of garlic as well., though I soaked the cashews first since I don’t have a bullet .After initial fermentation of 24-48 hrs, I wrapped it in baking paper, then brown paper and let it sit in fridge for 2 weeks or so and it turns into a harder cheese with a skin. Also amazing.😋

    OMG, a probiotic - that's terrific! I made something similar from a cook book, (Artisian Cheese by M.S), and it took 5 to 7 days to make the cheese. First - I had to make the yogurt. Then I used the yogurt to make the rejuevelac. Then I used the rejuevelac to make the cheese. I took that cheese and made Creamed (cream cheese) Corn for my Darling Omnivore's Thanksgiving feast at my youngest daughter's home, and later that evening at my Eldest Daughter's home, (Yep, we all get to eat twice on Thanksgiving in our family!!! LOL! Going to each other's homes.) It is the first of June and already I'm dreading having to do this again, because I know the in-laws, and my daughters are going to request this again...But, girl! You just saved my vegan behind!!!!

    Okay, so admittedly I thought, “this lady is so weird,” but the more I watched and listened to you speak, the more I was like, “this lady is freakin’ hilarious. I love her.” Thanks for the video. I’m actually in the process of making cashew cream cheese right now, but I didn’t wrap it in cheese cloth. I think I might go to the store and do it like you did in your video. I like the really thick cream cheese. 😀

    If you don't have probiotics on hand, you can substitute it with two table spoons of vegan yogurt (make sure it has live cultures). I also like to add a teaspoon of unpasteurized miso paste for an extra kick of probiotics and flavor. Fermented food is so healthy (and delicious)!

    Just got more raw cashews yesterday along with cheese cloth. If it turns out well (will use the 1 cup recipe for thicker cheese), then I will do the jalapeño popper thing I have done for years. Use McCormick's Perfect Pinch Cajun spice seasoning - I like mine really spicy, so I use a lot of the seasoning. Mix it into the "cream" cheese and let it rest for a while to mingle the flavors. Then use it to dip sliced radishes, peppers, carrots, celery, etc. WONDERFUL! I used to use fat free cream cheese, so I just wish there was a lighter alternative to the cashews..... BUT, I will def. try it!

    Just made this and put it up. I'll let you know what I think in a day or two. :) Thinking of what flavors I wanna fancy it up with. I tried to use my food processor but, my little ninja 1500 speed individual cup worked better. Got it creamier. Tastes yummy! Hard to believe its just cashews, water and salt. I had never used cashews like this before. Now I am convinced they are wonder nuts. LOL

      I have to reshoot the video where I caramelized the onions to go with this cashew cheese. It takes a full 40 minutes to do it and a lot of watching, but it is TOTALLY WORTH IT!

      I haven't been plant based very long, really I'm still transitioning from vegetarian to plant based. Your cashew cheese will make the jump easier I'm hoping! I grabbed Dr. Greger's Book "How Not to Die" earlier this year and am taking small but sure steps to a full, plant based, oil free life!

    Any recent updates for this recipe? I just made it with 2 cups cashews and put in 2 probiotic capsules as I was hoping it would make a nice firm, tangy cheese. I'll add some finely chopped scallions and carrots later to duplicate the veggie cream cheese sold at a local bagel shop. I think it might be pretty great on my toasted, homemade bagels.

    Jill, I just bought my Vitamix!!!! I can't wait to try this! We have been making smoothies and soups so far. I used to sprout seeds a lot and I would reuse the cheesecloth? Can you reuse the cloth after making cheese? How would you clean it?

      A cheesecloth or very thin tea towel is helpful when draining the mixture and flipping out the thick mass into the next container for seasoning, storing, or serving.

    I rewatched this video for the recipe and just thought I would mention ... I bought this same Nutribullet because I thought it worked so well for you.....and it worked well for me for a while also BUT last week I wanted to whirl some pancake batter in it to make the batter airier and the nutribullet exploded. plastic and batter went everywhere in the kitchen....ceiling, floor, cabinets everything....it took two days to recover my kitchen...so be carefull with that Nutribullet....and no it was not even close to being full.....don't know why it exploded....just wanted to let you know to be careful....Thanks for all your recipes...I love them and the videos....you are amazing.

      I hear ya about the NutriBullet. It's been a secret weapon in my kitchen for the past two years. It still is used more often than my 6 month old Blentec Blender...(a dream to use, don't get me wrong, does a great job - but for small batches, that's just too darned much scraping out the stuff from the blender jar because that's where the small batch ends up, smeared over the interior of the jar. Yes, it comes with a little blending jar. except - it's a holy mess all over your kitchen if you use it for any sort of little wet blending job). NutriBullet FTW! :)

    I just did this, 1/2 recipe and it was not thick, more like thin whipped cream with one cup cashews and 1/2 cup water. I completed the process and we will see if it makes a thick cheese or not in 2 days. I did it in my vitamix.

      THat's a GREAT idea!! I'm going to try that! I have fresh bottle of probiotic powder and I was planning on fermenting a batch of cheese for the family. I'll let you know how it turns out.       I have it in the Instant Pot now. It's been about 13 hours. My only concern is that moisture is building up inside the liner. I might just try flipping the lid upside down as I do not have a glass lid.

      I just went to the store yesterday. Bought bulk raw cashews at Wegman's..... Wish I could find an alternative recipe is fewer calories than Cashews....

    Still confused with the reduced 1-cup recipe. Are you supposed to reduce the water to 1/2 cup as well?

    wonder how nutribullet compares to 'magicbullet'......other flavors ( as found in the commercially sold 'real' cream cheese) might be pimento, dill, chives etc

      Honestly, I've not tried to bake it. Maggie keeps eating straight out of the container before I ever get a chance to plan anything with it.

    I could not find just a probiotic capsule so ended up getting one with acidophilous (sp?) and probiotic. Will this work or do I have to have JUST a probiotic?

      Acidophilus IS a probiotic. There are many different names representing many different strains. They all should work but may have different textures and flavour characteristics in the final product. Happy cheesing!

      FYI acidophilus is often named separately on a product with combined probiotics and very often sold alone because it is one of the most known and commonly referred to, especially for the treatment of issues like yeast infections and thrush. Hope this helps to clarify things for you. XO

    I just pulled my cheese out of the cupboard and it smells amazing but there are a couple of gray spots and one fuzzy spot. Is it still safe to eat? Did I leave it in there too long?

      There are several brands of probiotics that are vegan. Check the bottle to make sure it says non-dairy cultures and / or vegan.
