This was just delicious!!! I made this last night for a light meal. The casserole looked JUST LIKE yours. I followed your recipe exactly, and it WAS delicious. My husband and our guests LOVED it. The cheesy, pepper, eggy goodness, oh WOW!!! And the small amount that was left over was great for breakfast. Thanks again and again.
I've made this recipe twice in the past 3 weeks and it is terrific! Normally I add spices or tinker in other ways with recipes but not with either your casserole or salsa recipes - both are perfect. You have a fan in me.

I made this DELICIOUS casserole. The only change I HAD to make was using shredded Mexican Cheese Blend (Chihuahua,Cojita,Oaxacan) for top layer( had not purchased enough Oaxacan Cheese). This was the casserole of my DREAMS. VERY delicious and EASY. And CHEESY. If I do say so myself, my casserole looked EXACTLY like yours! My only concern was the short cooking time, I wandered if the batter would be thoroughly cooked. It was , of course. The casserole was fluffy, CHEESY and soooo good. My husband and our guests loved it. Thank You.

I just made this today-I knew from your video and your ingredients the cassarole would be super delicious, and it was! But the salsa really kicked this dish into outer space! Wonderful-thank you for sharing this recipe and for your easy to follow instructions❤
I just made it and and used almond flour. It did not disappoint, as long as you are accustomed to the "mouth feel" of almond flour. I did use a corn tortilla per instructions for the sauce because it does add to the authenticity, thickens the salsa, and adds a slight sweetness. Full disclosure: I'm not full-on keto anymore but do use almond flour to lower total carbs to help reduce my inflammatory autoimmune arthritis symptoms.
Love this will be trying the Casserole Version , Ive made the old fashioned version for over 40 years Love them , But I am wondering why the Crunchy Tortilla in the Salsa , I have never seen one added like that ?
I had a recipe years ago for Chile Rellenos that had chicken Picadillo as the stuffing. It was divine. I’ll have to dig around to find it. It would work for this casserole. If I make the full recipe, can I freeze some of it? Cooking for myself so would be great if I had portions in the freezer to pull out when needed. ❤️😎🐈⬛ This looks so yummy!
