    BETH'S EASY LEMON POPPY SEED MUFFINS
    Makes 12 Muffins or 6 Tea Cakes
    INGREDIENTS:
    3 eggs, room temperature
    ¾ cup (150 g) sugar
    ¾ cup (180 ml) melted butter
    ½ cup (120 ml) water
    3 tbsp (15 g) lemon zest
    1 tsp (5 ml) lemon extract
    1 tbsp (15 ml) poppy seeds
    1 ½ cups (180 g) flour
    1 tbsp (15 ml) baking powder
    ½ tsp (2.5 ml) baking soda
    1 tsp (5 ml) salt
    FOR GLAZE:
    ½ cup (50 g) of powdered sugar
    2 tbsp (30 ml) heavy cream
    zest of 1 lemon
    1 tbsp (15 ml) poppy seeds
    METHOD:
    Preheat oven to 400F degrees (200C). 10-12 mins
    Whisk together the flour, salt and baking powder and set aside.
    Mix together eggs, sugar, butter ,water, lemon zest, lemon extract and poppy seeds.
    Then slowly add the flour mixture just until combined, being careful not to over mix! (or your muffins will be tough)
    Bake for 10-12 mins. It's done when a toothpick comes out clean.
    For GLAZE:
    Mix cream and sugar until smooth. Once muffins have cooled place 1 teaspoon of glaze on each muffin, spread over surface. Sprinkle with a few seeds and top with fresh zest.
    NOTE* For Tea Cakes place batter in Jumbo Muffin Tin, and bake for 350 for 13-15 mins. Flip upside down to create domes and glaze tops the same way.

    I was JUST home this last week for spring break, and my mother had some lemon poppy seed muffins in the fridge. When I asked her for the recipe, she said it came out of a box. Lol! I was so disappointed. You completely read my mind again, Beth. Can't wait to try these. ^-^

    I watched this video this morning and just needed to try it! Me and my daughter went to the shop and got all the ingredients and she did all the mixing (she's 4) and they turned out amazing!!!! Safe to say they are almost all gone! Hands down the best lemon and poppy seed recipe I've ever tried ! Thank you Beth you are a genius xxx

      Awww LOVE that! So glad they were a hit! And because it's just a bowl and a spoon, really easy for the little ones to help too :) My daughters love to help in the kitchen as well, and it's such a sweet thing to do (even though at times it can be messy!) because it does instill the love of cooking!

    This is such a delicious recipe. I have a version where instead of the lemon extract, you would pour some lemon syrup (made from lemon juice and sugar) on the muffins once they are cool, and then let them absorb it. This recipe also had a bit of saffron in the batter. They are my boyfriend’s favorites.
    I also just saw on the internet a cupcake version with meringue on top… I will be trying it this weekend because it looked yummy.

      Yay! So glad it was a hit! Yes now the thing with the brownie I'm suspecting could have been the butter or the chocolate. Did you use real butter? (Not margarine) and was the chocolate "edible chocolate" not baking chocolate?

    Hi Beth, finally my kitchen is done!!! It's been a while since I wrote a comment to your gorgeous recipes and videos! These muffins are looking so fantastic. Just like you said: delicate and light. Well I have a question. Quite often you are using heavy cream. I'm living in Germany and I'm not really sure if it's a special kind if cream you use or if it's our 'standard' cream I always buy. So please could you tell me how much fat is in your cream? The standard over here got 32% fat. I will try your recipes now one at a time and I'm so excited. Thanks for your motivation and great vids. Your food looks always so mouthwatering. I need to learn how to decorate and to garnish! Lovely greetings, Martin.

    Hmm it Looks delicious!!! I will definitively Try it. But i think i will use a frostig out of lemon juice an d powdersugar instead of the one you propose.

      Sure you can do that too. One thing to keep in mind with the lemon juice is that it turns the white sugar a sort of dull gray. Just FYI. That's why I use the heavy cream instead to keep it white but add lemon flavor with the zest :)

      yes but i think we dont have the lemonextract here. only something thats called lemonaroma and i tried it in an other recepie and it isnt that good

      +Elaine Wang Yes it does seem like a lot, but I find it's necessary to get the lightness and lift because of the acid in the zest :) Hope you Enjoy!

      Sure you definitely could, they just will have a lighter lemon flavor, perhaps add a little bit more zest to compensate? :)

    Very nice Beth. I liked that u didn't add the lemon juice..it turns out tangy otherwise...These have only the lemon flavour I guess!!
