  • The BEST Spanish Gazpacho! or Spanish Tomato Soup. The recipe is from Andalusia, which is in the south of Spain. However, it is a very popular soup in the summer and should be eaten cold! It's also very simple to make and is one of many tasty and unique dishes in Spain!

    Recipe:
    Servings 3 - 4
    Prep time 5 - 10 mins,
    500g of Ripe Tomatoes, take out the pit.
    1/2 a Cucumber, peeled
    2 small bell peppers, or 1 big one. Red for more color. deseeded
    1/2 an Onion (Optional)
    30g stale crusty white bread (Optional) if you add it, soak it in water for a few minutes before blending.
    1/2 a clove of garlic (Optional)
    2-2½ tbsp (Vinagre de Jerez) Sherry Vinegar or to taste
    50ml, 1/4 a cup of Extra Virgin Olive Oil. add more if you want.
    Salt to taste
    Optional toppings: diced cucumber, onion, peppers and croutons
    Also, if you want to take out the bite in the garlic (the Allicin) and (sulfenic acid) in the onions, put them in a pot of water and bring to a boil, drain the water and repeat once more. then add to the blender.

    Gazpacho is apart from Salmorejo, papas, cazon en adobo and boquerones, one among many favourite dishes of Andalusia, in the summer I like to eat it, it is very delicious James, I didn't know how to prepare it, thanks to you now I will, hope you and Elizabeth are well and safe, thumbs up for gazapacho and ole

      Gracias Victor! Yes I want to make salmorejo soon! but i need to go shopping again. haha both are very easy to make,
      but need a blender and ripe tomatoes. the salmorejo is more bread that why it is so thick. I would like to make chowder soon as many people here don't know what it is.

      Gazpacho doesn't use rice, its a soups. tomatoes are the base.

    Dear Chef James, Can you explain a strange experience I had in Spain? Me and my coworker ordered a Gazpacho as a 1st course and expected a cold soup. To our surprise we got some kind of stew with pork meat. It was ok, but we were expecting a soup and we did not want to ask the service as they could not speak english and they were also busy. It was a restaurant in a small town between Albacete and Valencia. There could have been some other words to the dish name, but I dont recall any details. I werent able to find anything else on the internet to the gazpacho name dish except the famous soup.
    Thank you in advance for your response. Not an issue, I am just curious. I enjoyed the stay and the food in Spain very much.

      Gazpacho is a cold soup that doesn't include meat. You may have had Puchero or one of many other types of meat stews. They more than likely didn't understand what you were saying.

      @ChefJamesMakinson I checked google reviewes and found what we had. It was gazpacho manchego that we picked from the menu, not knowing it could be something else than cold soup, if that rings any bell.
