With this video you demonstrated the reason why out of all of the custom offsets out there LSG is my dream. Being able to cook directly over the firebox is everything and your chicken looks GREAT. Jerk chicken is something that I do on a regular basis using my 26 inch Weber Kettle. I use the medium sized vortex and instead of using hickory or any other kind of wood with my lump coals I use pimento berries to get as close as possible to using pimento wood. I wish pimento wood was readily available. Again, your chicken looks great and I’m going to try making that marinade one day. Right now I use Grace Mild jerk seasoning and Eaton’s Jamaican Jerk BBQ dry seasoning in my marinade. I never had good luck with Walkerwoods but I’m sure yours was slammin! Also, being in Arizona I’m sure you are suffering from the same epidemic we are experiencing in Bakersfield, CA….extreme heat. 😀

You literally have to be smart out here!!🥵🥵 I love the overall flavor of the Walkerswood but it can be a little overpowering/salty so I think I just hit a sweet spot mixed w that wet marinade. Finally when it comes to this Lone Star which obviously I'm biased but it takes a back seat to no other. While I'm sure I can dig and find some other great grills this thang here ain't nothing to play with!💯 I'm just starting to to do more direct fire cooks on it on certain things and chicken is one of the things I like to do on it as opposed to using my Weber. But I bet you could get away w any good jerk seasoning I didn't have much left. It was that walkerswood spicy wet marinade that really did the work on that back end flavor.
