You can eat this for cheap! Pour the milk you got from the grocery store and pour yourself a cup of milk. Put in the straw, blow into the straw and the edible bubbles will rise. Blow until the bubbles are at the height you like, then you can just take a bite.
I think perhaps it represents a cloud that begins to rain down on the dish. It’s absolutely stunning whatever it is. I bet it tastes incredible, it’s a work of art created by someone with clear passion for his/her work 😋
im really tired of people complaining about fine dining. plates are small because they're meant to be a tasting menu, and if they understood how much work and how many ingredients as well as the quality of ingredients will go into one plate that price tag makes way more sense

Foam actually has more culinary purpose than gold, so if it's done properly, I'll give it a try. Nothing on the plate that doesn't have a culinary purpose.
The beauty and artistic flare to this dish actually brought tears to my eyes. Who ever designed this dish had to have been a very sharp, creative and brilliant individual. Bravo! Very inspiring and moving! I love the way the sugar foam just floats like a balloon.

They are willing to spend that kind of money whether you think it’s worth it or not. Someone with the $100 to burn gets to have sugar foam over their bite sized dessert that was executed by someone with far more expertise and finesse than you could even imagine. You can try to replicate that at home, but the novelty/entertainment factor is gone once you have to put in work to get that kind of result. The beauty of it is that you don’t have to do it yourself. And that someone artistic enough thought of it before you.
In the UK I do have a favourite Michelin star resturant yet we are far from rich. We enjoy every moment, every mouth full (or not so full!!) about once every 18months or so and rave about it for the next 17 months, dreaming of our return!!

Dishwashing Detergent and some water. Voila! You have yourself a michellin star meal at home. Make sure to get a big white plate and add a tiny piece of butter in the middle and you would have replicated this "art" that people have tried so hard to convince you that it is. If you're not a fan of the taste of soap and you prefer the taste of gas, then get a tank of one of the most abundant elements in this world which is helium and then pump it into a tub of water until it bubbles up and then you would have truly replicated the taste of this expensive but cheaply made "dessert".
