Let’s give financier an Asian twist! Matcha seems to be a common one so let’s use black sesame this time. It’s surprisingly delicious!

▶Black Sesame Financier◀
All ingredients need to be at room temp (20°C) apart from the melted brown butter.
Quantity: 6 financiers
Brown butter: 60g
Egg white 79g
Sugar 52g
Honey 15g (helps keep the financier moist)
Almond Power 36g
Cake Flour 27g
Black sesame paste 11g
Baking Powder (optional) 0.3g
*Black sesame paste: I used store-bought black sesame paste. If you want to make it yourself, blend toast black sesame with just a bit of odourless oil until it turns into paste.

② Add egg white, sugar, vanilla powder and honey into a bowl and whisk.
③ Once the mixture looks well mixed, sift in the almond powder/cake flour/baking powder
④ Add brown butter of 40°C and mix well.
⑤ Bake at 180°C for 9~11mins (Pre-heat to 200°C)
▶Tuile (Black Sesame)◀
Sugar 50g, Black sesame 50g, Egg white 30g, Cake flour 6g, Melted butter 10g
Simply mix everything together with melted butter added last. Make sure you rest it overnight and use it the next day. Pipe it above the financier batter and bake together with the financier.
How to store the financier: Store in air-tight container and store at room temp up to 4~5 days.

오늘 만들었어요. 어제 페이스트랑 튀일 해놓고 오늘 휘낭시에랑 구웠는데 지인짜 맛있어요. 약간 덜익었나? 싶었는데 더 굽자니 딱딱해질것 같아서 멈췄는데 맞았네요. 눈으로 보기에는 그래보여서ㅎ 그리고 진짜 꼬숩고 위에 튀일 맛이 있고없고의 차이가 큰것 같네요. 튀일이 24개분량되는것 같아요 쓰고나니 반절 남았어요. 여튼 너무 맛있어요! 레시피북에 바로 적어놨어요

2배합해서 구울까 하다가 흑임자라서 애들이 안먹을까봐 6개만 구웠는데 너무 맛있데요. 담엔 두배합해야겠어요. 휴지안해도 되는 레시피라서 좋고요. 배꼽도 잘나와요

안녕하세요 슨생님!!!!!!! 흑임자 꼬순내가 여기까지 나는거같아요!!! 집에 꿀이 또오옥 하고 떨어졌는데 트리몰린과 물엿중에 어떤걸로 대체하면 될까요? 물엿+트리몰린 반반 섞어야할지,,, 아니면 물엿이나 트리몰린 중 어떤걸 사용해야 꿀과 유사한 단맛과 질감을 낼까요?

Hello! Thanks for sharing the recipe. Regarding the black sesame paste you are using, does it contain sugar/honey? Or just purely made from oil and sesame powder. The consistency of your paste looks quite liquidly.

Assuming one could source or make such a flavour of ice cream, could one serve a black sesame financier with black sesame ice cream? Or could that be a little too much?
haha it's a bit over the top but I guess it'll be ok for people who love black sesame! i've seen cafes like that in Korea.

Hi HanBit, is it alright to use black sesame powder? And what is the size of the financier? is it 11cm x 4cm?
oh it won't give the same taste. you need to use sesame paste - you can make it yourself if you have black sesame. the size of financier is similar to the pan that I have linked in the descriptions.
i would never found that black sesame paste called 흑임자 in korea lol

oh I've always only used sesame in the tuile...you can use sliced almonds though.
