You should visit TX Whiskey, I love their Sherry Cask Finish. I know you don't care for Finishes particularly, but they take a lot of pride in their Distillation.

I’m a big Still Austin fan. My wife took me to the distillery in February for my birthday and it was a great experience. The blue and red corn bottle in bond is awesome! I don’t care for rye but I real like their BNB rye. They have a new release coming out later this year I’m excited for. They are only releasing 800 cases.
There is place in Clarksville Tennessee called old glory. They make a small batch,bottle n bond, and a single barrel. If you ever go through I would love to see what you think. They are small distillery that do everything themselves. Love the videos!!
Still Austin is the gateway Texas bourbon. Next thing you know you will be buying Garrison Cowboy Bourbon and drinking on Ironroot Distillery Harbringer. Delicious and so unique.

I live here in Austin and was excited to see what you guys thought of my home town Bourbon. The walk through was great but when the tasting started you seemed a little irritated and felt like you wanted it to be over because of the lack of experience with the people that you took there. Not one of my favorites videos from you but still thank you for coming to Austin and still love your work!
I really enjoy these type of videos. I know these are not the most popular overall . most people are not gonna get to go tour a lot of these places a lot so it’s nice to be able to watch the video I was wondering why they stand the barrels up and not lay them down.
We are working on taking these up a few notches to see if we can make them more popular. Some interesting ones coming and we'll continue to build and improve the format.
It is genuinely a dream of mine to do a barrel pick somewhere. I don’t even know what for but I would love the opportunity to taste and compare barrels and get into the unique nuances that each has.
I know this isn’t about this video, but I was in Broken Bow, OK this past weekend and we tasted the bourbon at Hochatown Distillery and they do a fantastic job. Can’t recommend their single barrel bourbon enough. It’s so freaking good

Need to check out Southern Distilling Company out of Statesville, NC. Distill, age, and bottle their own bourbons and rye whiskeys and they are GOOD. Southern Star - Paragon Single Barrel Wheated Cask Strength is my favorite. Awesome facility and they do tours daily. Can buy bottles on site.
Just got my first bottle of Still Austin Cask Strength 116proof. It’s great. I’m new to bourbon I love the taste I’m not sure exactly what I’m tasting but I like it
TJ: You visit a lot of distilleries, thank you for sharing these videos. Please ask your tour guides about their yeast. It is the one ingredient we never hear about. Where is a new distillery getting their proprietary yeast? The older time tested distilleries depend on their yeasts staying the same because a slight difference could change the flavor of the bourbon. I want more info about the yeasts and their histories. Thanks again.

Still Austin Cask Strength is one of my favorites at the moment. I have not had a single barrel yet, but the blended is very good. I'm not sure why the single barrels cost more in general. I would think the blended would take more effort. I'm not saying the blended should cost more, I'm saying the single barrels should cost less. Marketing has fooled the consumers with the single barrel. Tell me why I'm wrong.
Single Barrel is one and done, you get a honey barrel and that's it, there is no more of it. You get into blended bottles, it is easier to pick and choose numerous barrels and blend them to a certain flavor profile that is repeatable, thus more bottles and a process that can be duplicated easier. It's not Marketing ploy, just simply a supply and demand process. That's why folks like to get store picks, as they can taste wildly different then the commercial blended offering.

I find it crazy that he’s sampling whiskey that’s over 80 degrees in temperature and dealing with the Texas heat. That’s a pretty tough job. How do you do that?

The hot Texas climate isn't the essential ingredient that makes Still Austin's whiskey so good at such a young age - you could take their personnel and their distilling machinery anywhere in the world and they would still make GREAT whiskey. Bottom line: these folks know what they're doing.
I'm in Fort Worth if anyone gets the still Austin BP feel free to share a pour. I'm almost a year sober so I just need a few drops. Lol just enjoy the nuances of the bourbon. I drank barrel aged stouts when I was drinking.

Perfect timing, I picked up my first bottle of Still Austin BP Bourbon last night! I'm pleasantly surprised.
Texas and Austin are unique but Still Austin is above and beyond unique on how they make their stuff.

The flavor intensifies at a faster rate, but I wouldn't call it the same flavor. It's different and unique in its own way.
Here in Austin it was a high of 48 degrees yesterday, today is 73 tomorrow is 81. That's rapid age.
