Em Yang, you should be able to use any brand tapioca starch. Just make sure you use the same amount of the tapioca starch as the jasmine rice flour (red bag). You can also view a newer edition of this video by going to the link in the description.

Yes, 6 cups of hot boiling water. 2 cups at a time. Some people reported that they used 5 cups or 5-1/2 cups total and it came out great. So, between 5 to 6 cups should be ok. Remember, don't stick your hands in while the water is still hot. :))
I see you used equal amount of topioca starch (a bag of rice flour and 1 bag of Topioca), correct? I remember my dad used to make this but he use less 1/2 of topioca starch, not sure if it makes any big difference? please advice, thanks.

Mylee Vang 5 cups is what I’ve used usually. Make sure the water is boiling hot. It will be mushy at first. Just keep stirring with the big spoon until the dough is not too hot to touch. Then use your hands to knead the dough until you don’t see any clumps. After you roll the dough, leave it for a couple minutes before cutting.

If you learn to make the noodles at a young age, and you are instructed to use your hands, they get tough and the heat won't bother them by the time you're an adult ;D

Arts Worlds sorry for the confusion. In the instructions in the video description I said to start with 4 cups and then add more as need up to 6 cups. In the years since uploading this video, I found that 5 cups of water is perfect for me.

Before, lots of people use 1/2 bag of tapioca. But using equal amount of rice flour and tapioca starch makes the noodles softer, not as stiff.

Did you use boiling hot water to mix the flour? If the water is not hot enough, the flour will not mix together very well.
