  • This is a remake of my Patongko video [ • C/w Nana: Patongko (ປາ... ]. If you read the description on the original video, you will remember that one was just a fun video and not planned.
In this new video, I hope it will be easier to follow. This is still the same recipe as in the original video. The entire video is about 22 minutes, but if you just want to get the gist of the recipe, the first 10 minutes will cover it. Then you can forward to the end if you don't want to see the rest.
I grew up calling fried bread stick "patongko," but some Lao people call it "chap kuay,"(ຈັບກ້ວຍ) which is based on the original Chinese name.
"Patongko" is the Thai name, but this recipe I am showing is different from the Thai ones I've seen. If you are looking for the Thai recipe, I'm sorry, but this is not it.
    INGREDIENTS:
    4 cups Self-rising flour
    1 packet Yeast
    1-1/2 cups water
    1 tbsp Cooking oil
    INSTRUCTIONS:
Mix the yeast in a half-cup of water. Mix the flour, milk, cooking oil, and yeast in a bowl. Let the dough rise for about 2 hours.
After the dough has risen, cut into small strips. Dip a chopstick in water and make small dents in two pieces and pinch them together. But DON'T PINCH TOO HARD. Just pinch enough so they stay together.
Fry the dough in hot oil until golden brown. Enjoy.

This is exactly what vietnamese "quẩy" looks like, we eat it with our traditional soups such as Phở soup, or rice porridge, or even deep it inside sweet & sour fish sauce and eat with salad. The sweet version (milk added) is usually eaten with yogourt. So yummy!
