Artichokes Stuffed with Crab

  • Chef Brenda of Brenda's French Soul Food restaurant in San Francisco walks you through how to cook fresh whole Artichokes stuffed with Crab!
    Preheat oven to 350*
    2 Large Artichokes
    2 TB Olive Oil
    4 TB Butter
    4 Garlic Cloves, Minced
    8 OZ Crabmeat
    2 TB Lemon Juice
    1.5 C Breadcrumbs
    1 C Grated Parmesan
    4 TB Sliced Scallion
    3 TB Minced Parsley
    1 TSP Kosher Salt
    1/2 TSP Black Pepper
    For the artichoke: Slice off the stem so that artichoke sits flat. Trim the top 1/3 of each. With a pair of scissors, snip off tips of each leaf. With a spoon, remove some of the middle leaves and the choke.
    For the filling: Heat olive oil and butter, then add garlic. Cook for 2 minutes over medium flame then remove from heat. Add crabmeat and lemon juice and lightly toss together. Set aside. Mix remaining ingredients in a bowl. Add crabmeat mixture and lightly toss everything together.
    Fill the artichoke center and each leaf with filling. Into a baking pan place both artichokes. Pour enough water into pan until artichokes are submerged by 1”. Tightly cover with foil and bake for about 40 minutes or until artichoke leaves pull away easily.

    Thankbyou for this video. I have a whole dungeness crab in my freezer that we smoked last summer to go with 2 artichokes I picked up yesterday. I've never made artichokes before, so your video was extremely helpful.
