    Chef Brenda of Brenda's French Soul Food restaurant in San Francisco walks you through all of the basics of how to cook omelets like a pro at home!
    Basic Egg and Cheese Omelet
    3 Eggs
    1 TB ½ & ½
    ¼ TSP Salt
    ½ C Cheddar or whatever
    Andouille Sausage Omelet with Mushroom & Cheddar
    1/3 C Sliced Andouille Sausage
    2 Small Button Mushrooms, Sliced
    2 TB Sliced Scallion
    3 Eggs
    1 TB ½ & ½
    ¼ TSP Salt
    ½ C Cheddar or whatever

    When you say a soft omelette are the eggs set or still a bit runny? I’m not a big fan of an omelette because the eggs tend to be over cooked. Yours looked light and fluffy - love your burrito technique. Not sure if I can master that egg flip - that’s awesome!!

      What I mean by soft is barely set, not runny. The best way to achieve that is to stop cooking just before the eggs set since they'll keep cooking on their own. Bon appetit!
