    You did a great job on this! I think the red kidney beans were an amazing choice because they added a beautiful color to the food. I believe when you're on a tight budget making food look nice makes you feel like you have more.

    Some people might balk at the sweetened beans. But, for years I have made black bean brownies. My daughter even requests them made as cupcakes for her birthday. When one sticks to a low budget, I find trying different recipes/cuisines, really helps with the monotony.

It would nice to see at the end of the challenge what ingredients you have left. As the the 2 pound bag of rice and maybe some of the other ingredients will last longer than a week.

    I bought the muffin mix a couple of weeks ago but haven't made it yet. Many , many years ago I lived on home made fried rice because it was a week before payday. I had it for all 3 meals each day for that time and was grateful for it. That was back in the 80s, before there were dollar stores. I did have a small Mom and Pop grocery store up the street from my apartment that carried produce and had bulk bins which were wonderful for a single person. A pound of bulk rice then was maybe 35 cent a pound, if that :)

      @@TheQuaintHousewife It was really healthy too. It had a little chicken in it, veggies, eggs, a little soy sauce...it really was delicious, hot and filling. I just used what little I had in my tiny kitchen back then. The experience taught me a lot. Another time back then ( I was only in my very early 20s) I had paid my bills and had zero money for food. So, I choose to be happy, and believe things would work out. I cleaned out my one closet of my studio apartment completely to reorganize it, and I found a metal box way back in the corner. I had never seen it before. I know it wasn't there when I moved in. I opened it, and it was filled with coins ! After I counted it it came to $20. I went to the bank, got the coin rolls and rolled it so I could cash it in. That $20 was my grocery money for that week. God saw my need and provided. Another time I was very short on cash, and couldn't afford to take my then boyfriend (later to be my husband) out for his birthday. I was crying as I was going to my car to go to his apartment to at least be with him on his birthday, and what did I find? A $20 bill under my front car tire ! 🥰💐🌷🌵🌺🌞🏜️💗✝️🥰💐🌷🌵🌺🌞🏜️💗✝️🥰💐🌷🌵🌺🌞🏜️💗✝️🥰💐🌷🌵🌺🌞🏜️💗✝️🥰💐🌷🌵🌺🌞🏜️💗✝️

    Another fascinating video. I've never been to Dollar Tree. For the last dish I though you were going to make fried rice. Use sesame or coconut oil and saute your green onions. Add an egg or two. Scramble. Add cooked rice, soy sauce, rice vinegar, whatever you have on hand. Add beans, vegetables. You could use a knife to chop the peanuts and sprinkle on top to serve with sliced green onion. Voila!

    I am Asian. Usually Its the Aduki bean we sweeten for desserts. It is also red but different from kidney beans. We use it to fill buns, pancakes and also make it into a porridge/ soup.

    My roommate and I ate a lot of hotdog fried rice in college. Fried rice is still my go to for using up stray left over veggies and meat.
    My cousin introduced me to kidney bean omelettes, which are quite tasty.

      @@TheQuaintHousewife You're welcome, thank you. I will need to refer to this often. May I ask a question about milk? Do you think it's more economical to buy dry powdered milk and use as needed?

    • @TheQuaintHousewife
      @TheQuaintHousewife  2 роки тому +1

      Only if you don't use it often or have a problem getting to the store to buy fresh milk. Powdered milk seems to be more expensive in many parts of the country. So just compare the fluid ounces of what you get from powdered to the liquid milk. Then compare price per ounce. You can always just get it if it's more convenient for you anyway!
