I learned to make Turkish lentil soup so long ago....pre internet days! I use vegetable stock and always add the juice of a whole lemon and plenty of zest, along with about 4 choppped fresh tomatoes and a good tablespoon of tomato puree, plenty of seasoning and garnish with lemon slices......never fails with my guests in winter!
Recently, I came back from Turkey after a wonderful holiday. Miss a lot of things about Turkey and the people. But this dish has to be my most favourite. Thank you x
@Knight Rider it actually does taste so much better, you will be surprised. I also thought it, tried without mint and then with it. When you fry dried mint it tastes differently.
Thank you. I recently 'discovered' red lentil soup and have fallen for it! I have been making versions for my 1st of two meals of the day. The Paprika infused oil is something new, though in your case it is hot pepper infused oil. It is a wonderful topper. The other things I am doing a little differently: I cook up hull-less barley and a batch of steamed chopped escarole. I add these (maybe 2 tbs each) to my individual servings of soup . This makes it more filling, and compliments the protein in the lentils to make a complete protein...and it (the hull-less barley) adds some minerals and fiber. I have been occasionally mixing in some coconut milk, but i think the addition of the infused oil will be what this needs. Thanks again!
I go to Turkish restaurans here in Brooklyn New york to eat this soap. Thanks for showing the receipt, now I am going to make my own. Love Turkish food.
Thanks for the receipe. In Egypt we cook it the same way except the mint. Also, we always use ghee instead of butter. For the final touch we fry some minced garlic gloves and coriander powder and add them before serving. Yummy :) . But today I will try yours using mint. Thanks again
Hi Anne Marie, its the chopped garlic sauted in the oil on a low to medium flame until just slightly golden. Be careful not to darken the garlic, as it will make the soup bitter.
I've made this twice in the last week and it's my new favorite thing! I omit the fat and use vegetable broth to make it vegan and fat free and it's still really tasty and flavorful. Today I added some dried lime I had on hand as an experiment. So good! Thank you for posting!
Hi Theresa I am happy you tried and it turn out good. Yes lemon or lime goes well when serving. Dried lime must have taken it to a different level of taste 🙋🏻
yes, havent tried dry ones, but i love mine served with lemon juice too, and use regular water. there are enough vegetables and spices in it, my family too prefers it like that. much fresher taste. in winter maybe some chicken broth against cold but not needed really.
DELICIOUS and easy. I used vegetable broth to keep it vegan, threw in some baby spinach before blending (always looking for ways to sneak in the greens) and squeezed some lemon juice on top. Nice recipe that I know I can remember and play around with.
I just made this soup in my Instant Pot, using one quart of vegetable broth in place of chicken stock and water. This tastes great, and I'll make it on a regular basis from now on. Thank you!
Did you use butter though? Because this recipe is ALMOST 'vegan': the only two non-vegan ingredients in this recipe are the chicken stock and the butter. So I really want to know how it tastes without the stock AND the butter? How important is the butter?? My favourite soup recipe, for Pumpkin/sweet potato soup, is also supposed to have 1 TBSp of butter, and I haven't tried making it without butter yet. I'm hoping though, that leaving out 1 TBSP of butter for a soup that is big enough to make at least 4 large bowls shouldn't even be noticeable! On the other hand, the recipe also calls for 1 TBSp of peanut butter - and that small amount makes a BIG difference to the flavouring of the soup (a GOOD difference!). (I use crunchy peanut butter - yum).
By the way - I just saw in a comment further below this, that someone mentioned that they added a few drops of squeezed lemon to the soup, and the woman who posted this UA-cam recipe responded that she 'also serves the soup with lemon' :-)
This recipe sounds delicious! I worked in Istanbul for a year and ate this soup for breakfast in the mornings, on my way to work. Turkish food is the best and now, thanks to you, I can recreate it! Many thanks and be well.
